Abstract

The testing of starch and protein in glucose and starch solutions was conducted using the Molisch test and other methods. Glucose, as a monosaccharide, serves as the main energy source, while starch, being a polysaccharide, must first be broken down into monosaccharides before it can be utilized. Carbohydrates, such as glucose and starch, provide energy and support food metabolism and characteristics such as taste, color, and texture. The methods applied in this review include literature studies on the chemical testing of starch and protein, focusing on the Molisch test for detecting carbohydrates in biological samples. Various approaches, including color-change-based methods and other analytical techniques, were used to measure starch and protein in glucose and starch solutions. The review findings highlight the importance of a thorough understanding of starch characteristics and its modification to enhance its utility in the food and pharmaceutical sectors. These findings support the use of pregelatinized starch and the exploration of alternative carbohydrates sources to improve food quality and variety. Qualitative tests, such as Benedict's, detect reducing sugars in foods, while temperature increases affect the moisture content and compaction of starch, especially in pregelatinized cassava starch. In conclusion, starch testing methods like iodine and Molisch tests are effective for analyzing starch and carbohydrates, while the ratio of starch to water and temperature play key roles in influencing the physical properties of starch.

Abstract

Temulawak (Curcuma xanthorrhiza Roxb) is a rhizome plant that has long been used in traditional medicine in Indonesia. The active compounds in temulawak function as antioxidants, which are essential in combating free radicals and preventing cell damage. This study aims to compare the antioxidant activity of ethanol extracts of temulawak obtained through maceration and ultrasonic extraction methods. The research method applied is pre-experimental, with testing conducted in triplicate to ensure result validity. Antioxidant activity was evaluated using the DPPH (2,2-diphenyl-1-picrylhydrazyl) method. The results show that the ethanol extract of temulawak obtained via maceration method has an IC50 value of 33.379 µg/ml. In contrast, the ultrasonic extraction method showed a lower IC50 value of 9.454 µg/ml, indicating stronger antioxidant activity. Temulawak, as an antioxidant source, has significant potential in the development of herbal products. The comparison of the two extraction methods shows that the ultrasonic method is more effective in enhancing antioxidant activity. This study emphasizes that the extraction method influences the antioxidant activity of temulawak. These results could serve as an important reference for the development of herbal-based products in the future.

Abstract

An alternative to synthetic ingredients with a focus on reducing the sticky effect upon application. Given the belief in natural ingredients being safer than synthetic chemicals, this body lotion was designed to utilise the antioxidant potential of telang flower. This study aims to develop a body lotion based on telang flower extract (Clitoria ternatea L.). This study used a quasi-experimental laboratory method with a completely randomised design (CRD) with a 3 x 2 factorial pattern, testing variations in the concentration of stearic acid (2.5%, 5.0%, 7.5%) and liquid paraffin (5.0%, 15%) on the quality of the Body lotion formulation. Organoleptic test results showed that all Body lotion formulas had a characteristic aroma and colour of bay flower, with varying colours depending on the concentration of ingredients. Homogeneity test showed that all formulas were homogeneous without coarse particles. The pH, viscosity, adhesion, and spreadability parameters of the Body lotion met the requirements of good cosmetics, with pH values between 6.68-7.47, viscosity between 2033-2459 cps, adhesion between 22-43 seconds, and spreadability between 5-6.9 cm. The acceptability test showed that all panelists liked the colour, aroma, and texture of the body lotion, and did not feel the sticky effect after application. This study concludes that variations in the concentration of stearic acid and liquid paraffin affect the quality of Body lotion, with the optimal formulation being able to reduce the sticky effect and increase the comfort of use on the skin.

Abstract

Traditional medicine practices in Indonesia have long utilised medicinal plants as the main foundation for public health resilience. This research aims to document local knowledge of medicinal plant usage and analyse its chemical profile to strengthen the scientific validity of traditional utilisation by the Purwakarta community. The methods used include ethnopharmacognosy surveys through semi-structured interviews with snowball sampling technique, specimen collection and identification, phytochemical screening of six groups of bioactive compounds, and qualitative-quantitative data analysis (UV, FUV, RFC, FL). The results show that there are 33 species of medicinal plants used by the communities of Taringgul Tonggoh and Wanasari villages, with leaves being the most utilised part (91% of oral usage). The Zingiberaceae family dominates the utilisation, while flavonoids and tannins were detected in the highest amounts in the phytochemical screening, supporting empirical claims as antioxidants, anti-inflammatory, and antimicrobial agents. These findings demonstrate the consistency between traditional practices and pharmacological potential, while also filling the gap in ethnopharmacognosy documentation in Purwakarta. The implications of this study strengthen the scientific basis for integrating local knowledge into modern pharmacy and open up opportunities for the development of phytopharmaceuticals based on local biodiversity.
