Abstract

Purpose: This study aims to investigate the effect of salt solution (NaCl) soaking on yam, focusing on food safety, organoleptic quality, and changes in chemical composition during the soaking process. Methodology: The method used was a factorial Complete Random Design with the following treatments: P0 = no treatment; P1 = soaking in 10 g/liter salt solution; P2 = soaking in 30 g/liter salt solution; P3 = soaking in 50 g/liter salt solution. Each treatment was repeated three times, resulting in 12 observation units. Results: The results indicated that higher salt solution concentrations led to increased water, ash, and starch content, while the solubility and swelling power of yam flour decreased. Findings: The study found that salt soaking positively affects the preservation and quality of yam by inhibiting pathogenic microorganisms and slowing down tuber rot. The increased concentration of salt solution was directly proportional to the increase in water, ash, and starch content. Novelty: This research provides new insights into the effects of salt soaking on yam, particularly on its chemical composition and potential benefits for food preservation. Originality: The study offers a detailed analysis of how different concentrations of salt solutions affect the quality and chemical properties of yam, contributing to the understanding of its implications for food safety and health. Conclusions: Soaking yams in higher concentrations of salt solution enhances their preservation by increasing water, ash, and starch content, while reducing solubility and swelling power. Paper Type: Empirical Research Paper Keywords: Flour; Salt; Soaking; Yam Banggai

Abstract

Banana hearts are usually cut so as not to inhibit fruit growth and prevent disease in banana plants, so they are considered waste. Actually the banana heart can be processed into beef jerky or meatballs which are rich in fiber. Implementation of activities includes observation, preparation, implementation and evaluation. The results of the implementation of training in making banana heart meatballs can increase knowledge and skills of mothers who are members of the Jalapagos group, about the potential of banana plants, namely banana flowers, which can be a new source of income so that they can improve the welfare of the community in Buon Mandiri village, Banggai district, Central Sulawesi. Then the community really expects the training activities as it has been implemented to continue to be carried out.

Abstract

In making Banggai yam flour, the best method and quality of flour on a standard production scale has not yet been found. Therefore, it is necessary to carry out research and innovation in order to obtain the best formulation for standard Banggai yam flour. One of the research innovations that was attempted was various methods of soaking the Pride yam before making flour. The aim of this research was to obtain the best results in several types of soaking on the chemical and organoleptic characteristics of Banggai yam flour. The method used was a Completely Randomized Design research with 4 immersion treatments with 3 replications, into 12 experimental units, namely: P1 = water; P2 = whiting solution; P3 = lactic acid solution; P4 = sodium metabisulfite solution. The variables of this research are proximate tests and organoleptic tests. The conclusions of this research are: In the proximate test results and gluten content, treatment P1 is the best in water and carbohydrate content, namely 12.48% and 79.04% respectively, then treatment P2 is the best in producing fat and gluten, namely 0.31% and 1.01%. Furthermore, the P3 treatment was the best in terms of ash and protein content, namely 2.14% and 10.45% respectively. In the organoleptic test results, Banggai yam flour, namely the P3 treatment, gave the best results in the color, aroma, texture and overall liking test for Banggai yam flour.

Abstract

Abstract

This study explores the development of analog rice from composite flours of moringa, purple sweet potato, and cassava to diversify local food and enhance nutritional value. The purpose of this study was to identify antioxidants and rice fiber analogue composites from moringa, purple sweet potato and cassava. The experimental design used was a Completely Randomized Design (CRD) with 1 factor of flour type (A) with a combination of 3 levels of treatment, namely: A1 = Moringa flour 150g, purple sweet potato flour 100g and cassava flour 50g; A2 = Moringa flour 125g, purple sweet potato flour 75g and cassava flour 100g; A3 = Moringa flour 100g, purple sweet potato flour 125g and cassava flour 125g; A4 = Moringa flour 75g, purple sweet potato flour 100g and cassava flour 150g. Using a completely randomized design, four formulations with varying ratios of the three flours were evaluated for fiber content and antioxidant activity. The results revealed significant differences (p<0.05) in both attributes across formulations. The highest fiber content (3.55%) was observed in the formulation with 150 g purple sweet potato flour, 100 g moringa flour, and 50 g cassava flour, while the highest antioxidant activity (11.80%) was achieved using 100 g each of moringa and cassava flours and 50 g purple sweet potato flour. These findings underscore the potential of composite flours to produce analog rice with enhanced nutritional benefits, contributing to sustainable food security and local food innovation.

Abstract

The purpose of the study was to determine the growth response of the best treatment of liquid organic fertilizer from waste coconut water and gamal leaves to the growth of red spinach plants. This study uses a Group Random Design (RAK) with one factor, namely the application of POC of coconut water and gamal leaves with 4 levels of treatment repeated 3 times so that it becomes 12 polybags, namely as follows: P0 = POC of coconut water waste and gamal leaves 20 ml/500 ml of water, P1 = POC of coconut water waste and gamal leaves 25 ml/500 ml of water, P2 = POC of coconut water and gamal leaves 30 ml/500 ml of water, and P3 = POC of coconut water waste and gamal leaves 35 ml/500 ml of water. The result of this study is that the application of liquid organic fertilizer from coconut water waste and gamal leaves has a very real effect on the growth of red spinach plants, namely in height, number of leaves, stem diameter, and wet weight. The best treatment in this study was P2 treatment (POC of coconut water waste and gamal leaves, 30 ml/500 ml of water) on all variables such as height, number of leaves, stem diameter, and wet weight of red spinach. Keywords: POC, Coconut Water, Gamal Leaves, and Fertilizer.
