Penelitian ini bertujuan untuk mengetahui Penerapan Standard Operating Procedure Buffet Breakfast Pramusaji di Layang – Layang InterContinental Bali Sanur Resort dan kendala dalam Penerapan Standard Operating Procedure Buffet Breakfast Pramusaji di Layang – Layang InterContinental Bali Sanur Resort. Penulis melakukan penelitian dengan menggunakan teknik pengumpulan data yaitu observasi, dokumentasi dan wawancara dengan menggunakan judul “PENERAPAN STANDARD OPERATING PROCEDURE BUFFET BREAKFAST PRAMUSAJI DI LAYANG –LAYANG INTERCONTINENTAL BALI SANUR RESORT.” Peneliti melakukan penelitian langsung (observasi) ke restoran di Layang – Layang InterContinental Bali Sanur Resort selama menjalani trainee dan melakukan wawancara secara langsung dengan assistant manager. Dari hasil penelitian yang diperoleh Standard Operating Procedure pramusaji sudah diterapkan di Layang – Layang InterContinental Bali Sanur Resort namun dengan hasil pramusaji belum menerapakan 100% sesuai dengan Standar Operasional Prosedur yang ditetapakan di Layang – Layang Restoran InterContinental Bali Sanur Resort. Karena ada point Standard Operating Procedure tidak diterapkan oleh Pramusaji. Kendala dalam penerapan Standard Operating Procedure (1) Sedikitnya Staff yang bertugas (2) kurangnya peralatan yang ada membuat pramusaji kelabakan dan pramusaji tidak menerapakan Standard Operating Procedure di Layang – Layang InterContinental Bali Sanur Resort. This study aims to determine the Application of Standard Operating Procedure for Buffet Breakfast Waiter at Kiyang – Layang InterContinental Bali Sanur Resort and obstacles in the Application of Standard Operating Procedure Buffet Breakfast Waiter at Kiyang – Layang InterContinental Bali Sanur Resort. The author conducted a study using data collection techniques, namely observation, documentation and interviews using the title "APPLICATION OF STANDARD OPERATING PROCEDURE BUFFET BREAKFAST WAITER AT KIYANG–KIYANG INTERCONTINENTAL BALI SANUR RESORT”. Researchers conducted direct research (observation) to restaurants in Layang – Layang InterContinental Bali Sanur Resort during the trainee and conducted direct interviews with assistant managers. From the results of the research obtained, the standard operating procedure of the waiter has been applied at Layang – Layang InterContinental Bali Sanur Resort but with the results the waiter has not applied 100% in accordance with the Standard Operating Procedure set at Layang – Layang Restaurant InterContinental Bali Sanur Resort. Because there is a point Standard Operating Procedure is not applied by the Waitress. Constraints in the implementation of Standard Operating Procedure (1) Lack of staff on duty (2) lack of existing equipment makes waiters run and waiters do not apply Standard Operating Procedure at Layang – Layang InterContinental Bali Sanur Resort.
