Abstract

Background: Personal Hygiene is a health effort by maintaining and protecting individual cleanliness to realize proper Personal Hygiene in food handling. Objectives: To determine the relationship between knowledge, attitudes and behavior towards personal hygiene of food handlers in the Jakabaring retail market Palembang. Method: Using Descriptive Analytics with a Cross Sectional Approach with a sample of 30 respondents. Results: Based on statistical tests with the Chi Square test, the p value is ≥ 0,05 (0,201) so That Ha is rejected, meaning there is no relationship between Knowledge and Personal Hygiene. The results of statistical tests with the chi square test show a p value of ≤ 0,001 ) p value ≤ 0,05) Ha is accepted, meaning there is a relationship with Attitudes towards Personal Hygiene. The results of the Chi Square Statistical test showed that the p value was ≥ 0,05, namely 0,113, so Ha was rejected, meaning there was no relationship between behavior and Personal Hygiene. Conclusion: There is no relationship between knowledge and Personal Hygiene so Ha is rejected These result show that there is no significant relationship between knowledge and Personal Hygiene, There is a relationship between attitudes towards Personal Hygiene so that Ha was accepted These result can be concluded that there is a relationship between attitudes towards Personal Hygiene, There is no relationship between behavior towards Personal Hygiene so that Ha was rejected these results show that there is no significant relationship between behavior towards Personal Hygiene.

Abstract

Background: Cappuccino iced drink is one of the most popular drinks people are interestedin, if in the management of drinks it is not hygiene and sanitary may result in the presence of ingredients in food and drink that can cause health problems for consumers. Purpose: The purpose of this research to analyze the relationship of sanitary hygiene with the presence of bacteria esccherichia coli on a cappuccino iced drink. Method: Using a Cross Sectional Research Design. Research Sample were 30 person. Types of Qualitatif Results: Based on statistical tests with the Chi Square test, the p value is ≥ 0,05 (0,201) so That Ha is rejected, meaning there is no relationship between Knowledge and Personal Hygiene. Conclusion: It shows that there is a relationship between personal hygiene of handlers, there is a relationship between equipment sanitation hygiene, there is a relationship between sanitation hygiene at places where drinks are sold, and there is a relationship between ice cappuccino vending facilities and the presence of Escherichia coli bacteria by showing a value of (p<0.05), there is no relationship between raw materials. with the presence of Escherichia Coli bacteria in the iced cappuccino drink showing a value of (p>0.05), the OR value = 8.333, meaning that Hygiene Sanitation of Raw Materials has an 8.33 times chance of the presence of Escherichia Coli bacteria, while from laboratory results it is 6.7% of all iced cappuccino drink samples were positive for Escherichia Coli and 9.33% of iced cappuccino drink samples were negative for Escherichia Coli in accordance with RI Minister of Health Regulation No. 1096/MENKES/PER/IV/2011 concerning Health Requirements for Hand-Wiped Cutlery, Food Ingredients, and Food (Catering Services) with requirements for pathogenic germs

Abstract

Background: Young coconut ice drink is one of the drinks that are most sought after by the public, if in the management of unhygienic and sanitary drinks can cause the ingredients in food drinks that can cause health problems for consumers. Purpose: This study aims to analyze the relationship of sanitary hygiene with the presence of Escherichia Coli bacteria in Young Coconut Ice drinks. Method: This type of research is a research in the form of experiments taken from literature studies. Data collection by observation, interview, questionnaire and laboratory examination. Data analysis using statistical tests with Chi-square test to analyze the relationship of sanitation hygiene with the presence of Escherichia Coli bacteria in young coconut ice drinks. Result: The results of this study indicate a relationship of sanitary hygiene with the presence of Escherichia coli bacteria by showing a value (p<0.05) while from laboratory results as much as 80% of all samples of positive young coconut ice drinks Escherichia Coli and 20% of samples of young coconut ice drinks negative Escherichia Coli, especially in processing raw materials as many as 3 traders who met the hygiene sanitation requirements and 16 traders who did not meet the hygiene requirements sanitation. Conclusion: There is a relationship between sanitation hygiene and the presence of bacteria Escherichia Coli in young coconut iced drinks, The research results show that there are still many iced drinks available young coconuts that are positive for containing Escherichia Coli bacteria are suitable with RI Minister of Health Regulation No. 492/Menkes/PER/IV/2010 concerning Requirements Drinking Water Quality is 0 per 100 ml sample, The results of this research show that in terms of sanitation hygiene principles there are still those who do not meet the sanitation hygiene requirements, especially for processing of raw materials in accordance with the Republic of Indonesia Minister of Health Decree No. 942/Menkes/SK/VII/2003 Guidelines for Sanitation Hygiene Requirements Snack Food.Keywords: Sanitation Hygiene, Young Coconut Ice, Escherichia Coli
