PROSEDUR INVENTARISASI BARANG PADA BAGIAN KITCHEN DI MELKA EXCELSIOR HOTEL Oleh : Kadek Indah Dwi Martha Sari Jurusan Akuntansi Program Diploma III, FEB Undiksha arbei_maniez@yahoo.co.id Abstrak Penelitian ini bertujuan (1) untuk mengetahui prosedur inventarisasi barang pada bagian kitchen di Melka Excelsior Hotel dan (2) untuk mengetahui standar-standar prosedur inventarisasi barang pada bagian kitchen di Melka Excelsior Hotel. Penelitian ini adalah penelitian deskriptif kualitatif. Subjek penelitian ini adalah pihak Purchasing, Receiving, User, Storage dan Supplier yang ada di hotel. Data tentang prosedur inventarisasi didapat menggunakan metode observasi, wawancara, dan dokumentasi. Data dianalisis secara deskriptif.Hasil penelitian menunjukkan bahwa (1) prosedur inventarisasi barang pada bagian kitchen di Melka Excelsior Hotel belum memadai karena masih adanya kelemahan yaitu pemesanan barang yang dilakukan mengalami gangguan karena human error dan sistem yang sering eror, sering terjadi pembelian yang mendadak dan terkadang melakukan pemaksaan terhadap supplier berkaitan dengan pengadaan barang. (2) standar inventarisasi barang sudah cukup baik namun sering terjadi permasalahan berkaitan dengan proses pencatatan dan kurangnya controlling dari pihak purchasing dalam menjalankan tahapan-tahapan yang ada sehingga menyebabkan kehilangan barang. Hal ini menunjukkan pentingnya controlling bagi pihak-pihak yang terkait dalam prosedur dan standar inventarisasi barang sehingga mendukung untuk kelancaran proses produksi. Kata Kunci : Prosedur, Standar Inventarisasi dan barang Abstract This study aims ( 1 ) to know the inventory procedure of goods on kitchen at Melka Excelsior Hotel and ( 2 ) to determine standards of inventory procedure of goods on kitchen at Melka Excelsior Hotel . This research is descriptive qualitative research . The subjects were the Purchasing , Receiving , Users , Storage and Supplier in the hotel . Data on inventory procedures obtained using the method of observation , interviews , and documentation . Data were analyzed by descriptive method. The result showed that ( 1 ) the inventory procedure of goods in the kitchen at Melka Excelsior Hotel is not adequate because there are still weaknesses , ordering goods interference experience due to human error and system error often, incidental purchases happen frequently and sometimes do coercion to suppliers relating to the procurement of goods . ( 2 ) the inventory standard of goods is quite good but common problems associated with a lack of recording process and controlling from purchasing parties in carrying out the exist stages that cause the loss of the goods. This shows the importance of controlling for the parties involved in the procedures and standards that support the inventory of goods for a smooth production process.
