Abstract

ABSTRACTAntibacterial activity of liquid extract of bacteriocin from Lactobacillus sp. strain SCG 1223 was relatively stable against Escherichia coli, Salmonella thypimurium and Listeria monocytogenes during storage. However, published work on activity of bacteriocin in dry encapsulated form is limited. This research work was aimed to evaluate antibacterial activity of encapsulated bacteriocin from Lactobacillus sp. strain SCG 1223 against E. coli, S. thypimurium, and L. monocytogenes on various formulated combination using spray drying method of encapsulation.  Research was performed using complete randomised factorial design with three factors, i.e. ratio of maltodextrin to skim milk powder (1:0; 1:5; and 1:2), bacteriocin load in the microcapsules (20% and 40%), and inlet temperatures of spray drying (150oC and 170oC). Results showed that encapsulated bacteriocin of Lactobacillus sp. strain SCG 1223 of formula A2B1C1 (16.67% maltodextrin and 83.33% skimmed milk powder;  liquid bacteriocin concentration of 20%; and inlet feed of spray drying temperature of 150oC) had better inhibitory activity against E. coli (779.82 AU/mL), S. thypimurium (912.68 AU/mL), and L. monocytogenes (947.25 AU/mL) than those without encapsulation.
