4. KAJIAN BEBERAPA JENIS KEMASAN TERHADAP DAYA SIMPAN MELINJO KERNEL (Gnetum gnemon L.)

ABSTRAK Penelitian ini bertujuan untuk mendapatkan kemasan yang tepat dalam mempertahankan daya simpan kernel melinjo. Percobaan dirancang dengan Rancangan Acak Lengkap dengan perlakuan Jenis Kemasan (Plastik PE, Plastik PP, Aluminium foil, Karton lipat dan Karung terigu). Setiap perlakuan diulang tiga kali. Data hasil penelitian dianalisis dengan analisis keragaman dan Uji Beda Nyata Jujur pada taraf 5%. Hasil penel;itian menunjukkan bahwa : Pengemasan yang berbeda memberikan pengaruh yang berbeda pula terhadap kadar air dan warna kernel melinjo pada penyimpanan 60 hari, dan aroma pada penyimpanan 90 hari. Selama penyimpanan total mikroba tertinggi diperoleh pada kernel melinjo yang dikemas dengan kemasan karung terigu dan terendah pada kemasan Aluminium foil. Sampai dengan penyimpanan 90 hari pengemasan kernel melinjo dengan menggunakan aluminium foil memberikan pengaruh terbaik terhadap daya simpan dibandingkan dengan kemasan plastik PE, PP, karton lipat dan karung terigu, ditinjau dari parameter kadar air (12%), warna kuning kecoklatan, aroma disukai dan total mikroba 1,8 x 104 koloni/g kernel melinjo. ABSTRACT The aim of this research is to find out the suitable packaging extend the storage life kernel of melinjo. The treatments are arranged by Completely Randomized Designed that consist kind of packaged treatment (Poly Ethylene plastic, Poly Propylene plastic, Aluminium foil, folding cartoon, and wheat flour sack). Each treatments is repeated three times. Data were analyzed by Analysis a variance and continued by Honestly Significant Difference at 5% significane levels. The result showed that the different packaged give the defferent effect of the water content and colour of kernel melinjo at the 60 days storage, and flovour up to 90 days storage. During the storage, the highestof total mikrobe content achieved at the kernel melinjo which packaged in wheat flour sack and the lowest at the aluminium foil. By the 90 day storage, the package of kernel melinjo by using aluminium foil give the best effect through the storage life compared by PE plaetic package, PP, folding cartoon and wheat flour sack, observed by the paremeter of water content ( 12 % ), the yellowish brown colour, prefered flavour and the total mikrobe is 1,8 x 104 kolonies/g kernel melinjo.
