Abstrak Desa Ketapang merupakan desa pesisir yang terletak di Kecamatan Ulujami, Kabupaten Pemalang. Wilayah desa ini juga didominasi oleh pertanian tambak sehingga mendorong masyarakatnya bekerja menjadi nelayan dan petani tambak. Desa ini memiliki banyak potensi unggulan, yang paling menonjol yaitu ikan bandeng. Masyarakat masih menjual ikan bandeng dalam keadaan mentah sehingga nilai jualnya tergolong rendah. Hal ini mendorong mahasiswa KKN Unnes memperkenalkan inovasi pengolahan ikan bandeng yakni mengubah ikan bandeng menjadi makanan food frozen berbentuk nugget melalui kegiatan sosialisasi dan demonstrasi yang diselenggarakan di balai Desa Ketapang dengan melibatkan tim penggerak PKK, karang taruna desa, Lembaga Pemberdayaan Masyarakat Desa (LPMD), dan beberapa masyarakat umum. Kegiatan yang berlangsung mendapat respon positif dari tamu undangan atau sekitar 77% dari tamu undangan antusias mencatat dan bertanya perihal bahan, cara pembuatan nugget bandeng, kemasan, pemasaran, serta perizinan produk. Inovasi ini dapat dikembangkan menjadi program berkelanjutan guna mendorong UMKM Desa Ketapang sehingga menjadi desa mandiri.AbstractKetapang Village is a coastal village located in Ulujami District, Pemalang Regency. This village area is also dominated by pond farming, which encourages the community to work as fishermen and pond farmers. This village has many excellent potentials, the most prominent of which is milkfish. People still sell milkfish in a raw state so the selling value is relatively low. This prompted Unnes KKN students to introduce milkfish processing innovations, namely converting milkfish into frozen food in the form of nuggets through socialization activities and demonstrations held at the Ketapang Village hall by involving the PKK driving team, village youth youth groups, Village Community Empowerment Institutions (LPMD), and some of the general public. The activity that took place received a positive response from the invited guests or about 77% of the invited guests enthusiastically taking notes and asking questions about ingredients, how to make milkfish nuggets, packaging, marketing, and product licensing. This innovation can be developed into a sustainable program to encourage MSMEs in Ketapang Village to become independent villages.Keywords: Innovation; Nugget; MSME
