Abstract

Adas (Foeniculum vulgare Miller) adalah tumbuhan herbal yang mengandung minyak atsiri dengan kandungan senyawa anetol sebagai antimikrobial. Penambahan minyak atsiri adas pada edible coating. merupakan cara untuk melapisi permukaan produk pangan dengan tujuan mencegah kontaminasi patogen sehingga dapat memperpanjang masa simpan. Tujuan dari penelitian ini adalah mengetahui pengaruh penambahan minyak atsiri adas (Foeniculum vulgare Miller) sebagai edible coating pada bakso. Destilasi minyak atsiri adas dilakukan dengan metode Microwave Assisted Extraction (MAE). Destilasi ini menggunakan variabel daun segar dan biji adas. Variabel yang digunakan dalam destilasi adalah daya (80, 240, 400) watt dan waktu (20, 25, 30) menit. Hasil penelitian menunjukkan, rendemen tertinggi dihasilkan dari minyak atsiri adas yaitu sebanyak 1% pada daya 400 watt dengan waktu 20 menit. Minyak atsiri adas memiliki sifat mudah menguap sehingga identifikasi senyawa dapat diketahui dengan metode Gas Chromatography-Mass Spectrometry (GC-MS) . Berdasarkan hasil analisa gugus fungsi diketahui bahwa minyak atsiri mengandung senyawa utama yaitu trans anetol yang memiliki sifat antimikrobial. Kata kunci: adas, antimikrobial, edible coating, Microwave Assisted Extraction (MAE) ABSTRACT Fennel (Foeniculum vulgare Miller) is an herbal plant consists of essential oil containing anethole as an antimicrobial. Adding fennel essential oil to edible coatings is a way to coat the surface of food products to prevent pathogen contamination, thus extending the shelf life. This research aimed to analyze the effect of adding fennel essential oil (Foeniculum vulgare Miller) as an edible coating on meatballs. Distillation of essential oil from fennel leaves and seeds was carried out using the Microwave Assisted Extraction (MAE) method. This distillation uses variable fresh leaves of 100 grams and fennel seeds of 50 grams with variable power of 80 watts, 240 watts, and 400 watts. The time used in distillation is 20 minutes, 25 minutes, and 30 minutes. The results showed that the highest yield obtained was as much as 1% of fennel essential oil at a power of 400 watts with a time of 20 minutes. The identification of chemical compounds contained in the funnel essential oils was done by using the Gas Chromatography-Mass Spectrometry (GC-MS) method. The results showed that the funnel essential oil contained the main compound of trans-anethole with antimicrobial properties.
