PENGOLAHAN NUGGET AMPAS SOYA SEBAGAI INOVASI PENINGKATAN NILAI JUAL LIMBAH PADA UMKM INDUSTRI TAHU

Abstract

Abstrak: Tahu, panganan berbahan dasar kedelai atau soya, adalah salah satu makanan yang mengandung protein nabati yang dibutuhkan oleh tubuh, memiliki harga murah, dan banyak dikonsumsi masyarakat. UMKM industri tahu sudah lekat dalam keseharian masyarakat Salaman, Magelang, Jawa Tengah. Masyarakat diuntungkan dari segi ekonomi dengan terciptanya lapangan pekerjaan, namun disisi lain juga memberikan dampak negatif khususnya pada lingkungan tempat tinggal. Limbah sisa pengolahan tahu seringkali membuat kotor dan menimbulkan bau yang tidak sedap. Meskipun demikian, pengolahan limbah dengan tepat justru dapat memberikan nilai tambah bagi masyarakat. Kegiatan abdimas ini dilaksanakan di desa Salaman, magelang dengan tujuan untuk memberikan edukasi sekaligus praktik inovasi pengelolaan limbah tahu yang menjadi nugget asoy. Metode pelaksanaan abdimas terdiri dari tiga tahap, yaitu (1) edukasi, (2) pelatihan dan praktik, serta (3) pendampingan. Kegiatan ini bermitra dengan para pelaku UMKM PKK Desa Sidosari Kecamatan Salaman sebanyak dua puluh orang. Keberhasilan kegiatan diukur melalui monitoring dan evaluasi ketercapaian pelaksanaan abdimas pengelolaan limbah ampas tahu. Hasil kegiatan adalah (1) kegiatan sosialisasi berjalan lancer, sebanyak 90% mitra memahami dampak limbah ampas tahu yang dapat mencemari lingkungan serta potensi limbah yang masih memiliki nilai jual, (2) seluruh mitra (100%) antusias mengikuti instruksi membuat produk pangan dari ampas tahu, serta (3) terdapat dua mitra (10%) yang meneruskan menjalankan usaha penjualan nugget asoy.Abstract: Tofu, a food made from soybeans or soya, contains vegetable protein needed by the body, has a cheap price, and is widely consumed by the community. The tofu industry UMKM has been closely associated with the people's daily lives in Salaman, Magelang, Jawa Tengah. The community benefits economically by creating jobs, but on the other hand, it also has a negative impact especially on the residential environment. Waste from tofu processing often makes it dirty and smells bad. However, proper waste processing can provide added value to the community. . This community service activity was conducted in Salaman village, Magelang, to provide education and innovative practices for managing tofu waste in soy nuggets. The community service implementation method consists of three stages, namely (1) socialization education, (2) training and practice, and (3) mentoring. This community service activity partners with UMKM PKK actors in Sidosari Village, Salaman District, totalling twenty people. The activity's success is measured through monitoring and evaluating the achievement of the implementation of community service for managing tofu dregs waste. The results of the activity were (1) the socialization activity went smoothly, as many as 90% of partners understood the impact of tofu dregs waste that can pollute the environment and the potential for waste that still has sales value, (2) all partners (100%) enthusiastically followed the instructions for making food products from tofu dregs, and (3) there were two partners (10%) who continued to run the soy nugget sales business.
