Abstract

ABSTRACTThe study was aimed to acknowledge the best combinationbetween the proportionofblack rice andwheat flour,andthe addition ofglycerolmonostearateto producebreadwithgoodqualityandfavoredby consumers. The bestresult of the research showed the besttreatmentonthecombined treatmentofblackrice flour andwheat flour60%: 40% withaproteincontent of9.393%, 29.911% antioxidant activityandanthocyanincontent of81.699%and125color test, 126 taste test and126testtexture.Panelist preferredproduct in terms of color,flavorandtexturethatcan be developedas afunctional food.Key words: black rice, glycerolmonostearate, white bread ABSTRAKPenelitian ini bertujuan untuk mengetahui kombinasi terbaik antara proporsi beras hitamtepung beras hitam dan penambahan gliserol monostearat sehingga dihasilkan roti tawar dengankualitas baik dan disukai oleh konsumen. Hasil penelitian menunjukkan bahwa perlakuan terbaikterdapat pada kombinasi perlakuan antara tepung beras hitam : tepung terigu 60% : 40% dengankadar protein 9,393%, aktivitas antioksidan 29,911%, dan kadar antosianin 81,699% dan nilai ujiwarna 125, uji rasa 126 dan uji tekstur 126. Produk yang dihasilkan disukai panelis dari segiwarna, rasa dan tekstur sehingga dapat dikembangkan sebagai pangan fungsional.Kata kunci : beras hitam, gliserol monostearat, roti tawar
