<![CDATA[ABSTRAKPenelitian ini bertujuan mengetahui jumlah cemaran bakteri Staphylococcus aureus pada telur asin mentah yang dijual di Pasar Induk Lambaro Aceh Besar. Penelitian ini menggunakan dua 12 telur asin mentah yang diperoleh dari empat pedagang secara acak, setiap pedagang diambil tiga butir telur. Metode penelitian ini menggunakan metode Standard Plate Count (SPC). Data hasil penelitian ini dianalisis secara deskriptif. Hasil penelitian menunjukkan bahwa rata-rata jumlah cemaran bakteri Staphylococcus aureus yang terdapat pada abu gosok yaitu 9,8 x 105 cfu/g, pada kerabang telur yaitu 3,3 x 105 cfu/g, dan pada isi telur yaitu 1,0 x 105 cfu/g. Berdasarkan hasil penelitian dapat disimpulkan bahwa jumlah cemaran bakteri Staphylococcus aureus pada telur asin mentah yang dijual di Pasar Induk Lambaro Aceh Besar melebihi ambang batas SNI yaitu lebih dari 1 x 101 cfu/g. ABSTRACTThe aim of this study was to detect the amount of bacterial contamination of Staphylococcus aureus in raw salted eggs sold in Lambaro main market, Aceh Besar. This study used twelve raw salted eggs obtained from four trader in Lambaro main market, from each trader three raw salted eggs. This research used Standard Plate Count (SPC) method. The data from the result of research was analyzed descriptively. The results revealed that the mean amount of bacterial contamination of Staphylococcus aureus on the ash was found 9,8 x 105 cfu/g, on the eggshell was 3,3 x 105 cfu/g, and on the egg content was 1,0 x 105 cfu/g. From this study it can be concluded that the amount of contamination of Staphylococcus aureus in raw salted eggs sold in Lambaro main market Aceh Besar exceeds the SNI threshold which is less than 1 x 101 cfu/g.
