Desa Tanjungsari adalah salah satu desa di Kecamatan Jabon, Sidoarjo yang terdampak bencana lumpur Lapindo. Desa ini memiliki kawasan mangrove sekitar 30 ha, namun potensi ekologis dan sumberdayanya rusak akibat bencana tersebut. Mata pencaharian utama masyarakat pesisir tersebut adalah pembudidaya ikan dan udang di tambak dan sebagiannya perambah ranting dan pohon mangrove. Pohon api-api (Avicennia marina) adalah mangrove sejati yang buahnya dapat diolah menjadi bahan pangan bernilai gizi tinggi. Kegiatan ini berupa ceramah dan demonstrasi kepada ibu-ibu PKK dusun Tanjungsari dan Tegalsari. Materi ceramah tentang ekosistem mangrove dan pemanfaatannya. Demonstrasinya meliputi pembuatan tepung api-api dan pembuatan kudapan seperti bolu, brownies, pukis, kue lumpur, dan donat. Hasil kegiatan menunjukkan bahwa ibu-ibu PKK peserta antusias mengikuti kegiatan dari awal hingga akhir. Selama kegiatan, peserta turut serta membuat produk secara mandiri. Produk-produk hasil kegiatan menunjukkan penerimaan organoleptik yang baik dan memiliki kandungan gizi yang dapat diterima. Penggunaan proporsi tepung api-api tidak boleh berlebih karena akan menghasilkan rasa getir. Beberapa produk, seperti brownies dan donat, bahkan memiliki kandungan kalori tinggi karena bahan penyusun dan metode pengolahannya. Pada masa pendampingan menunjukkan beberapa ibu PKK telah mempraktikkan dan menjualbelikan produk kudapan tersebut di lingkungan sekolah desa Tanjungsari. Kesimpulan kegiatan ini ibu-ibu PKK desa Tanjungsari sudah berpengetahuan, berpengalaman dan bersumber penghasilan baru dengan memanfaatkan buah mangrove menjadi kudapan Tanjungsari Village is one of the villages in Jabon District, Sidoarjo, affected by the Lapindo mud disaster. This activity was in the form of lectures and demonstrations to PKK women in Tanjungsari and Tegalsari hamlets. The lecturer's material was mangrove ecosystems and their utilisation. The demonstrations included making mangrove flour and snacks like sponges, brownies, pukis, mud cakes, and doughnuts. The activity results showed that the participating PKK women were enthusiastic about participating in the activity from the beginning to the end. During the activity, participants participated in making products independently. The products resulting from the activity showed good organoleptic acceptance and had acceptable nutritional content. The proportion of mangrove flour should not be excessive because it will taste bitter. Some products, such as brownies and doughnuts, even have a high-calorie content due to the ingredients they make up and the processing method. During the mentoring period, it was shown that several PKK mothers had practised and traded snack products in the Tanjungsari village school environment. Conclusion of this activity: the PKK women of Tanjungsari village are knowledgeable and experienced and have a new source of income by utilising mangrove fruits as snacks.
