Abstract

Abstract: Food is a necessity that can be consumed by humans. Healthy food is food that is managed properly and correctly so that food does not have a negative impact on health for workers in the textile industry. Based on the results of the total germ count test on cutlery in the textile industry canteen, it has not met the requirements with a total germ count of 163 colonies / cm2, the surface area of cutlery does not meet the requirements of Permenkes RI number 1096 of 2011. The purpose of this study was to determine the time variation that affects the decrease in the total number of germs on cutlery with a sterilizer using UV-C lamps in the textile industry canteen. The study employed an experimental design with a post-test-only control group approach and utilized a single sampling method. The results of laboratory tests show that the average decrease in the total number of germs with a variation of time of 10 minutes is 126 colonies / cm2 surface area of cutlery or 73%, variation of contact time of 15 minutes is 148 colonies / cm2 surface area of cutlery or 84%, variation of contact time of 20 minutes is 170 colonies / cm2 surface area of cutlery or 97%.
