Monitoring pH in the tempoyak fermentation process is essential to ensure the quality and safety of the final product. Uncontrolled pH values can affect the success of fermentation and produce poor-quality tempoyak. This research aims to design and develop a prototype of a microcontroller-based tempoyak pH monitoring device. It uses a pH sensor to measure the acidity level of tempoyak during the fermentation process, which is then processed and displayed on an LCD screen. Arduino microcontrollers are used as data processors that can also provide alerts in the form of alarms if the pH value is outside the desired range. The test results show that this tool is able to provide accurate and real-time pH measurement results. With the use of microcontrollers, this tool can make it easier to monitor pH automatically and efficiently, and provide convenience for tempoyak manufacturers in maintaining product quality
