Abstract

Used frying oil is a waste generated from methods of frying that exceed two uses. If disposed of improperly, used cooking oil can lead to environmental pollution and health risks. The increasing consumption of cooking oil in Indonesia results in a significant volume of used cooking oil waste each year. Cheese banana vendors in the Karang Menjangan Market area of Surabaya produce approximately 3 liters of used cooking oil and generate 15 kilograms of white kepok banana peel waste daily. White kepok banana peels contain lignin, tannins, pectin, antioxidants, and flavonoids. This study aims to utilize white kepok banana peels as a purification agent for spent cooking oil, focusing on the decrease in peroxide value and free fatty acid levels. The research employed a pure experimental approach using a control group design that only includes posttests. Samples of used cooking oil were obtained from cheese banana vendors, and the white kepok banana peels were processed into charcoal powder. One-Way ANOVA was used to analyze the data. to evaluate the effectiveness of the adsorbent. According to the findings, the white kepok banana peel adsorbent successfully decreased peroxide value and free fatty acid levels.. A mass variation of 12 grams of adsorbent reduced free fatty acid levels by up to 58.65%, while a mass variation of 8 grams was most effective in reducing peroxide value by up to 79.45%. Both results fulfilled SNI 3741:2013, the Indonesian National Standard. The adsorbent's moisture content of 14% also complied with the SNI. According to this study, white kepok banana peels have the potential to be an environmentally friendly solution for the treatment of used frying oil.
