Abstract

The objective of this study was to investigate the effect of ginger extract addition and refrigerate storage on sensory quality of Tuna through panelist’s perception. Panelists (n=30) evaluated samples for overall appearance and flavor attribute using hedonic scale 1–7. The sample which is more acceptable by panelists on flavor attributes having 3% gingers extract and storage for 3 days. The less acceptable sample on flavor attribute having 0% ginger extract and storage for 9 days. On the other hand, the sample which is more acceptable by panelists on overall appearance having 0% ginger extract without storage treatment. The less acceptable sample on overall appearance having 3% ginger extract and storage for 9 days.

Abstract

Tilapia fish production is available almost all year round, so fish is easy to obtain and economic value. Use of low temperature 0°C on wet fish can prolong the process rigormortis, can suppress bacterial activity, chemical and organoleptic changes. This study aims to determine the effect of different weights to the organoleptic quality of tilapia fish during cold storage. Observations made include a description of the eyes, gills, and texture and odor panel using a team of 15 people. The results showed that weight did not influence the quality of tilapia fish orgnoleptic. And storage of up to 2 days, fish is still fresh classified.

Abstract

The mangrove forest is a transitional ecosystem between land and sea.  As a transition area between land and sea, mangrove forest ecosystems have environmental properties of a sharp gradient.  Tides can result in changes in several environmental factors, mainly temperature and salinity.  One type of animal that can tolerate these environmental changes are of a group of mollusks.  The purpose of this study was to identify the types of mollusks (Gastropoda) found on the floor of Mangrove Forest, using transects squares drawn perpendicular from the shoreline mangrove cutting edge.  From this research activity gastropods found in the floor of mangrove forest-Rap Rap village consists of five phyla, and nine species, namely: Family Cerithiidae, namely Cerithium cobelty and Clypeomorus coralium.  Family Littorinidae are Littoraria scabra, family Muricidae are Chicoreus capucinus, and morula margariticola Drupella rugosa, from the family of Nassarius Nassariidae Potamididae margaritifer and family, namely Telescopium telescopium and Terebralia sulcata.

Abstract

Seaweed jam can be made by dry seaweed or fresh seaweed.  Research result indicated that dry seaweed jam and fresh seaweed jam can be accepted by consumer.  In the tekstur and color perspective, dry seaweed jam and fresh seaweed jam in the good graces (point 4), whereas in smell perspective, both of the jam rather in the good graces (point 3).  Taste of the dry seaweed jam is in the good graces (point 4) whereas fresh seaweed jam rather in the good graces (point 3) by consumer.
