Abstract

The improvement of patients’ food satisfaction and acceptance in the hospitals is primarily needed in the food service  system.  Room service is a new concept in the food service area. This study aims to compare the effects of two different types of food service systems; room service and conventional service system. The study with quasi-experimental design is conducted to the subject of 66 inpatients who were taken using a quota sampling method. Subjects were divided into different groups, the treatment groups (room service) and control groups (conventional). Leftover food between groups was compared for 9 large meals to determine acceptability. Food satisfaction is measured on the last day with using questionnaire. The study was conducted in April-June 2014. Chi-Square test and logistic regression were used for analysis of research data. There were significant differences food satisfaction (RR=4.6; p=0.0001) and food acceptance (RR=1.94; p=0.0488) between control and treatment group. The logistic regression test showed that room service group had higher food satisfaction and food acceptance level than control group after controlling confounding factors, which were 12,11 times (95% CI 3,593 – 37,219) and 2,38 times (95% CI 0,68-8,31), respectively. The room service increases food satisfaction and food acceptance of patients compared with conventional systems.

Abstract

The general objective of this study was to analyze the cost control towards the food availability and the nutritional adequacy level of the female santri in Darul Arqam Boarding School, Garut. The study was held in April until June 2015 using the cross-sectional study. The sample was taken purposively with a total of 86 people. The result showed that the food service management was able to manage over 88.09 percent of total funds. The pearson correlation showed that there was no significant correlation (p>0,05) between the cost with the energy, protein, fat, vitamin C, and iron availabilities. There was a significant correlation (p<0.05) between the cost and the carbohydrate availability. The energy and nutrients have not reached the nutritional requirement of the students. Thus, the adequacy level of the energy, protein, vitamin C, and iron was categorized as severely deficit. The carbohydrate adequacy level classified as normal, while the fat adequacy level classified as excessive. The study suggested the management of the Boarding School to review the existing budget for meals in order to ensure the menu could meet the nutritional requirement of the santri. Beside, efforts need to be taken to ensure improved balanced and healthy meal available for the santri.

Abstract

The aim of the study is to evaluate "One Day No Rice (ODNR) movement" based on food diversification consumption of government employee in Depok. The study design was descriptive analytic survey. Samples of 74 people were  taken through purposive sampling. The inclusion criteria covered employee of Depok City Government,  staffing level of II and III, worked at least 3 years, and healthy. Samples that have a history of diabetes mellitus were excluded.The results showed that of 68.9 per cent were aged less than 40 years; 58.1 per cent of men; 45.9 per cent had a degree of S1 or equivalent; 66.2 per cent with staffing  level of III.  Amounted to 90.5 per cent employees informed about ODNR movement, but only 5.4 per cent have applied food diversification consumption. Fisher Exact test showed no relationship between application food diversification consumption among employees with age (p = 0.651), gender (p = 0.107), education level (p = 0.275), staffing level (p=0,584) and knowledge on ODNR movement (p = 1.000). Considering the importance of food diversification, it is recommended to continue the movement with strengthened strategy on health promotion.  Promotion with leaflets and brochures as well as nutrition balanced education associated with ODNR to prevent non-communicable diseases such as diabetes mellitus, obesity, and overweight caused by undiversified food consumption.

Abstract

Stroke is the leading cause of death and disability in the world. Several studies have shown that stroke can be prevented through modifiable risk factors. The adequate treatment of hypertension may reduce the risk of stroke. Lifestyle modification such as reducing salt intake in hypertension management have demonstrated lowering blood pressure, enhancing the effectiveness of antihypertension drugs and also reducing stroke risk. This study aims to verify the survival rate of hypertension with lower sodium intake (<2000 mg per day) on the incidence of stroke. The study was conducted through a prospective cohort study (4 years of follow-up) in 1082 people with confirmed hypertension. Stroke were confirmed by neurologist. The consumption of sodium, sugar and fat were collected through 24-hour dietary recall. Hypertension survival rate was calculated using Life Table Survival analysis. This study has demonstrated evidence of the higher survival rate of hypertension with low sodium intake on the incidence of stroke, with the difference 2-year survival rate is 3 percent higher and 4-year survival rate is 5 percent higher. Sodium consumption of <2000 mg per day in people with hypertension has prevented a 78 percent incidence of stroke. Therefore, the intervention programs to reduce of the consumption of salt or sodium in Indonesia should be prioritized.

Abstract

The global epidemic of obesity is rapidly becoming a major public health problem in many countries of the world. Rapidly changing diets and lifestyles are trigger to the global obesity epidemic. This study aimed to determine the prevalence of central obesity and the relationship between central obesity and lipid profile in adults aged 25-65 years. This study used baseline data "Cohort Study of Non-Communicable Diseases" that was carried out in 2011-2012 in Bogor City, West Java Province. The study design was cross-sectional. A number of samples analyzed were 4554 subjects. Result of the analysis showed that the prevalence of central obesity was found 51.3 percent. The portion of subjects with high total cholesterol levels was 16 percent. The percentage of high LDL cholesterol levels was 17.6 percent. While the portion of low HDL cholesterol levels was 16.2 percent and the portion of high triglyceride levels was 8.5 percent. The results of logistic regression analysis showed that central obesity in adults aged 25-65 associated with lipid profile after controlling the variables of sex, age, and smoking habits. The need for preventive measures to prevent central obesity and abnormal lipid profiles evolve toward disease complications through the fulfillment of adequate daily physical activity and healthy eating habits.
