Abstract

Penyebaran wabah pandemi COVID-19 yang sangat cepat memberi dampak pada perekonomian dunia, termasuk di sektor pangan dan pertanian. Penurunan 1% pertumbuhan ekonomi Tiongkok di tahun 2020 bisa berdampak sekitar 0,3% terhadap perekonomian yang ada di Indonesia, tidak terkecuali di Aceh. Oleh karena itu stimulus ekonomi kreatif menjadi salah satu alternatif yang sangat tepat dalam mengatasi masalah perekonomian masyarakat, dengan pemanfaatan komoditi lokal melalui inovasi kaldu bubuk tempe sebagai ketahanan pangan keluarga di Desa Purwodadi Kabupaten Nagan Raya. Tujuan kegiatan ini untuk memberikan pentingnya edukasi ekonomi kreatif pada masyarakat pesisir terutama pada keluarga miskin menuju ketahanan pangan keluarga dimasa pandemi COVID 19. Metode kegiatan yang digunakan melalui pendekatan yaitu edukasi, diskusi, pelaksanaan (pelatihan atau praktek) dan evaluasi. Hasil pengabdian ini menumbuhkan jiwa kemandirian untuk membentuk Usaha Mikro Kecil Menengah (UMKM) pada masyarakat pesisir, khususnya pada keluarga miskin, sehingga dapat menjadi salah satu upaya dalam menuju ketahanan pangan keluarga di masa pandemi COVID 19. Kata kunci: Covid 19, ekonom kreatif, UMKM ABSTRACT The very rapid spread of the COVID-19 pandemic outbreak has had an impact on the world economy, including in the food and agriculture sectors. A 1% decline in China's economic growth in 2020 could have an impact of around 0.3% on the existing economy in Indonesia, including in Aceh. Therefore, the creative economic stimulus is one of the most appropriate alternatives in overcoming the economic problems of the community, by utilizing local commodities through the innovation of tempeh powder broth as family food security in Purwodadi Village, Nagan Raya Regency. The purpose of this activity is to provide creative economy education to coastal communities, especially poor families towards family food security during the COVID 19 pandemic. The method of activities used is through 5 approaches, namely coaching, formation, implementation, monitoring, assistance and evaluation. The result of this service is the formation of Micro, Small and Medium Enterprises (MSMEs) in coastal communities, especially in poor families, so that it can be one of the efforts towards family food security during the COVID 19 pandemi. Abstract

Nagi Sipadeh merupakan salah satu usaha berkembang yang menjadi mitra pengabdian masyarakat LPPM Universitas Andalas yang memiliki keinginan besar untuk terus berinovasi mengembangkan berbagai jenis produk olahan jahe merah. Salah satu produk yang ingin dikembangkan adalah permen jahe merah. Dalam upaya pengembangan produk permen jahe merah, masih banyak kendala dan permasalahan yang dialami oleh Nagi Sipadeh terutama kurangnya pengetahuan tentang teknologi produksi permen. Melalui kegiatan pengabdian kepada masyarakat yang dilakukan ini diharapkan dapat membantu usaha Nagi Sipadeh untuk meningkatkan keterampilan dan kemampuan dalam memproduksi permen berbahan baku jahe merah. Kegiatan pengabdian kepada masyarakat ini dilaksanakan dalam tiga bentuk kegiatan, yaitu penyuluhan, pelatihan, dan bimbingan berkelanjutan. Pelatihan yang dilakukan mencakup pada teknologi produksi permen yang meliputi komposisi bahan-bahan yang diperlukan dalam pembuatan permen disertai edukasi mengenai fungsi dan peranan masing-masing bahan tersebut dalam komposisi permen, kemudian dilanjutkan dengan penyampaian cara pengolahan yang tepat serta prosedur pengemasan permen yang baik. Hasil dari kegiatan ini Usaha Nagi Sipadeh mendapatkan pengetahuan dan keterampilan mengenai proses pengolahan permen baik dalam bentuk permen keras maupun permen lunak serta mengetahui teknik pengemasan permen yang tepat. Kata kunci: Jahe merah, Nagi Sipadeh, permen ABSTRACT Nagi Sipadeh is one of the developing businesses that is a community service partner of LPPM Andalas University who has a great desire to continue to innovate in developing various types of processed red ginger products. One of the products to be developed is red ginger candy. In an effort to develop red ginger candy products, there are still many obstacles and problems experienced by Nagi Sipadeh, especially the lack of knowledge about candy production technology. Through this community service activity, it is hoped that it can help Nagi Sipadeh's efforts to improve skills and abilities in producing of red ginger candy. This community service activity is carried out in three forms of activity, namely counseling, training, and ongoing guidance. The training carried out covers candy production technology which includes the composition of the ingredients needed in making candy along with education about the function and role of each of these ingredients in candy composition, then continued with the delivery of proper processing methods and good candy packaging procedures. As a result of this activity, Nagi Sipadeh's business gained knowledge and skills regarding the candy processing process, both in the form of hard candy and soft candy, as well as knowing the right candy packaging technique. Abstract

Kegiatan pengabdian masyarakat yaitu pelatihan pembuatan es yoghurt talas beneng dilakukan oleh dosen Program Studi Teknologi Pangan, Universitas Sultan Ageng Tirtayasa dilakukan kepada masyarakat Kampung Ciborang, Desa Kadubeureum, Kecamatan Pabuaran, Kabupaten Serang yang diwakili oleh anggota UMKM Karisma Creativa. Talas beneng dipilih karena umbi indigenous Banten yang kaya akan pati dan serat pangan akan tetapi belum termanfaatkan. Es yoghurt talas beneng dipilih karena bisa berfungsi sebagai pangan sinbiotik yang dapat bermanfaat bagi kesehatan, akan tetapi harganya sangat terjangkau. UMKM Karisma Creativa adalah UMKM yang mengolah pangan lokal seperti keripik umbi-umbian sehingga cocok untuk dilakukan hilirisasi penelitian yoghurt talas beneng yang dilakukan oleh dosen Program Studi Teknologi Pangan Untirta. Tahapan yang dilakukan dalam kegiatan ini yaitu identifikasi masalah, survey ke tempat secara langsung, penyuluhan oleh narasumber, dan praktek langsung pembuatan es yoghurt talas beneng oleh masyarakat. Hasil yang diperoleh yaitu masyarakat Kampung Ciborang khususnya anggota UMKM Karisma Creativa sangat antusias dalam pelatihan dan diskusi. Hasil pelatihan ini diharapkan masyarakat Kampung Ciborang khususnya UMKM Karisma Creativa dapat mengembangkan pangan lokal indigenous Banten yang sehat dan dapat dipasarkan dengan harga terjangkau sehingga dapat meningkatkan ekonomi masyarakat. Kata kunci: Kampung Ciborang Pabuaran, diversifikasi, talas beneng, yoghurt, peningkatan ekonomi ABSTRACT Training on making talas beneng yogurt ice, carried out by lecturers of the Food Technology Department, University of Sultan Ageng Tirtayasa, were conducted for the people of Ciborang Village, Kadubeureum Village, Pabuaran District, Serang Regency, represented by members of MSME Karisma Creativa. Talas beneng was chosen because the indigenous tuber of Banten is rich in starch and dietary fiber but has not been utilized yet. Taro Beneng yogurt ice was chosen because it can function as a synbiotic food that can be beneficial for health, but the price is very affordable. MSME Karisma Creativa is an MSME that processes local food such as tuber chips so that it is suitable for downstream research on talas beneng yogurt conducted by lecturers of the Food Technology Department Untirta. The stages carried out in this activity are identification of problems, direct site surveys, community service, and direct practice of making talas beneng yogurt ice by the community. The results obtained are that the people of Kampung Ciborang, especially members of MSME Karisma Creativa, are very enthusiastic in training and discussions. The results of this training are expected that the people of Kampung Ciborang, especially MSME Karisma Creativa, can develop local indigenous Banten food that is healthy and can be marketed at affordable prices so that it can improve the community's economy.
