Abstract

The presence of microbes mainly lactic acid bacteria are thought to play a role in the process of microbial fermentation in the digestive tract of animals during the mongoose. Efforts need to be engineered so that the yeast fermentation of animal dung to produce a Luwak Coffee Luwak coffee berspesifikasi high quality based on the alleged role of lactic acid bacteria (LAB) in fermented Luwak coffee. This research aims to produce dry yeast single culture of Leuconostoc mesentoroides and Leuconostoc paramesentoroides with the addition of the appropriate filler agent, and to know the level of viability of yeast products produced during storage.The parameters observed in this study include: calculation of bacteria using PCA (Plate Count To), water content of yeast, sugar reduction method of Nelson-Somogy, pH and total acid. Results The study found that the optimum filler agent for the growth of Leuconostoc mesenteroides and Leuconostoc paramesenteroides is rice flour. Microbial population in rice flour filler agent that is still very much during the storage in the second appeal filler agents, namely maize and tapioca. Successive growth of Leuconostoc mesenteroides using cornstarch, tapioaka and rice at the end of the storage is 1.5 x 109 CFU/g, 1.7 x 107 CFU/g and 2.2 x 1010 CFU/g. Paramesenteroides Leuconostoc populations in a row on cornstarch, tapioca and rice is 6.3 x 1010 CFU/g, 2 x 107 CFU/g and 8.6 x 1010 CFU/g.Keywords: dry yeast, lactic acid bacteria, fermentation ,filler agent

Abstract

The gembolo contains glucomannan and has the ability to WHC 1900%. To extend the shelf life of the gembolo can be made into flour. To prevent browning reactions by enzymes that do steam blanching. Gembolo flour can be used as composite flour in the manufacture of sausages, which are used for filler than tapioca. The objectives of the experiment were to evaluate physical, chemical, and sensory characteristics of chicken sausage bydifferent types and concentrations of composite gembolo flour. The study uses two factors, the first factor is types of gembolo flour (gembolo flour natural and gembolo flour with blanching) and the second is the concentration of gembolo flour (10%, 20%, and 30%). Each treatment was repeated 5 times. Test data of physical and chemical characteristics were analyzed by analysis of variance, if different tested with Duncan's New Multiple Range Test. Sausage oranoleptik test data were analyzed by Friedman test. Appropriate treatmenttoproducechicken sausage with the best physical and preferred isA2B1withtypes gembolo flour with blansing concentration of gembolo flour 10%. The chicken sausage has a value ofWHC 85,33%, value oftexture 45,50 g/mm, brightnessvalue 46,11, cooking loss 5,21%, water content 63,69%, protein content 14,99%, ash content 0,68%, fat content 2,04%, carbohydrate 18,60%.Keywords: meat chicken sausage, composite, tapioca, gembolo, filler

Abstract

Minuman fungsional harus memenuhi dua fungsi utama pangan yaitu memberikan asupan gizi serta pemuasan sensori seperti rasa yang enak dan tekstur yang baik. Minuman fungsional berbasis kulit buah naga merah, rosela dan buah salam secara empiris sudah banyak diketahui memiliki efek yang menyehatkan bagi tubuh. Tahapan pelaksanaan penelitian pembuatan minuman fungsional berbasis ekstrak kulit buah naga merah, rosela dan buah salam ini tersusun atas tiga tahapan. Kandungan kimia betasianin pada kulit buah naga merah 186,90 mg/100g. Antosianin buah salam 38,00 mg CyE/100g dan rosela 32,3 mg CyE/100g. Aktivitas antioksidan bahan dasar kulit buah naga 53,71%, rosela 54,30% dan buah salam 54,85%. Hasil pengujian organoleptik menunjukan sampel p6 (50% kulit buah naga, 10% rosela dan 40% buah salam) merupakan formulasi terbaik. Karakteristik fisik yang dimiliki oleh minuman fungsional p6 diantaranya pH sebesar 3,69, kecerahan (L)23,8 dan oHue (oH) 345,76. Kandungan kimia yang dimiliki minuman fungsional ini meliputi betasianin 350,37 mg/100g, antosianin 54,75mg CyE/100g, vitamin C 242,00 mg/100g dan aktivitas antioksidan 68,97%. Penurunan mutu betasianin dan aktivitas antioksidan pada minuman fungsional (50% kulit buah naga, 10% rosela dan 40% buah salam) selama penyimpanan suhu dingin (5-10oC) dan suhu ruang. Penurunan betasianin penyimpanan suhu dingin dari 100% turun menjadi 83,21%, sedangkan pada suhu ruang dari 100% menurun hingga 50,29%. Penurunan aktivitas antioksidan penyimpanan suhu dingin dari 68, 97% hingga 59, 45% dan pada suhu ruang penurunan dari 68, 97% hingga 37, 86%. Hasil penelitian menunjukan minuman formulasi kulit buah naga 50%,rosela 10% dan buah salam 40% lebih baik digunakan dalam pembuatan minuman fungsional, karena mengandung antioksidan dan warna yang lebih menarik serta disukai oleh panelis.Keywords: Kulit buah naga, rosela, buah salam, minuman fungsional

Abstract

Diabetes mellitus (DM) is a metabolic disease related to insulin deficient and or resistant that lead to hyperglycemic or blood glucose level higher than normal value (120 mg/100mL). Prolong hyperglikemc emerging the chronic effect such as retino, nefropati, and neuropati diabetic that decrease child growth and working performace. Balance diet with bioactive compound that stimulated pancreatic function or insulin secretion is one effort for stabilizing blood glucose level. This cross sectional research were aimed to evaluate the effect of functional diet of fried alvocado seed noodles,bean, and goat flash on blood glucose level of NIDDM subject. Abstract

Bananas have potential to be developed as a functional food prebiotic because it contains a resistant starch and dietary fiber, the raw banana contains 50% resistant starch type II and dietary fiber (14.52%). The aim of the research were to evaluate prebiotic properties insoluble dietary fiber (IDF) extracted from agung and mas banana flour. The banana flour produced from agung and mas variety used controlled fermentation by Brevibacillus brevis for 24 hours at room temperature. The IDF was extracted by using enzyme method. The prebiotic properties were evaluated based on their resistance to gastric acid hydrolysis, their capable to increase survival of probiotic bacteria (Lactobacillus acidophilus) and decrease pathogenic bacteria (enteropathogenic Eschericia coli/EPEC). The results showed that process fermentation of banana flour increased insoluble dietaryfiber (IDF) content mas and agung banana. Insoluble dietary fiber (IDF) fermented mas and agung banana flour was more resistant than non-fermented mas and agung banana IDF byhydrolysis gastric acid. Insoluble dietary fiber (IDF) of fermented banana flour to increase the survival of L. acidophilus, while decreased the survival of EPEC.Key word : banana, insoluble dietary fiber, prebiotic properties

Abstract

Onion (Allium ascalonicum L.) has a high demand and need, but it has not beenfollowed by an increase in production. This is due to the limitations of cultivation and to avoid the rainy season. Therefore, the need for shade and mulch to the planting medium that aims to control soil moisture and increase the production of onion plants effectively and efficiently. The study was conducted 7 shade and mulch treatments with 3 replications. Production control treatment weighing 70 grams and the amount of 18.7 tubers with soil moisture content (SMC) 35.8%; black-silver plastic mulch treatments weight of 426.7 grams the amount of 122.7 tubers SMC 34.4%; transparent plastic mulch treatments weight of 556.7 rams the amount of 174 tubers SMC 33.4%; silver plastic mulch treatments weight of 443.3 grams the amount of 130.7 tubers SMC 33.8%; paranet shade treatment weight of 80.7 grams the amount of 22.7 tubers SMC 35, 4%; straw mulch treatments weight of 46.7 grams theamount of 12.7 tubers SMC 36.5%; and vegetative shade treatment weight of 173.7 grams the amount of 51.3 tubers SMC 34.8%. Abstract

This study is devoted to the performance and emission evaluation of automotive diesel engine as affected by coco biofuel utilization. The concentration of palm biodiesel used in the test was ranged from B0 (pure petro-diesel), B10, B20, B30, B50 and B100 (pure biodiesel). The engine performance was evaluated through torque, power, and specific fuelconsumption, while the emission was evaluated through carbon monoxide (CO), hydrocarbon (HC), particulate matter (PM), carbon dioxide (CO2), and NOx pollutants. The result shows that higher content of palm biodiesel can reduce the emission of CO, HC, PM, and CO2. It was found that the addition of biodiesel could increase the power and torque. Further more, NOx also decreased when the content of palm biodiesel increases, which is in contrast with those generally found in the previous non palm biodiesel studies.Keywords: palm oil biodiesel, petro-diesel, carbon monoxide, hydrocarbon, particulate, matter, O2,and NOx pollutants

Abstract

This research aims to create Digital Elevation Model (DEM) manually, presenting information DEM Rawatamtu sub-watershed and evaluate DEM produced. A method of creating DEM using software ArcGIS 10 with input data obtained from digitazion map in a geocentric manner Indonesia (RBI) and survey the scorching tile with global positioning system (GPS). DEM that has been created having spatial resolution 10 meters with a height 3032,44 m.dpl maximum and minimum 33,82 m.dpl. Information from Rawatamtu subwatershed such as contour (showing the condition of the surface of the land), slope (showing the level of the steepness of the land), aspect (showing the direction of the slope), 3 dimensional display (visualize land forms in 3D), and line of sight (determine the state of a place can be seen from elsewhere). Based on the test results, DEM made manually with spatial resolution 10 meters, the level of error is relatively small and could describe characteristic of topography the watershed of more detailed.Keywords: DEM, watershed management, RBI’s maps, GPS

Abstract

Indonesian coffee consumption per capita increase every year, it was 6-8%. Now, Indonesian coffee consumption is 800 g/capita/year. They like of instant coffee and three in one coffee, because this coffee was very simple and easier to prepare. The Robusta coffee has higher of yielded, nevertheless the Arabica coffee has good flavor. Generally, the crystallization step of instant coffee processing conducted by cane sugar adding. Coconut palm sugar has good flavor, but the crystallization step would be difficulty when used on instant coffee processing, because the sucrose content of coconut palm sugar lower than cane sugar. The aim of this research was to obtain the appropriate of Robusta-Arabica coffee ratio and coconut palm sugar-cane sugar ratio to produce the coconut palm sugar instant coffee which has good properties and good preference. Based on this research, the best treatment was Robusta-Arabica coffee ratio 1-2 and coconut palm sugar-cane sugar ratio 30-70.Keywords: instant coffee, robusta coffee, arabica coffee, coconut palm sugar, cane sugar

Abstract

The purposes of this research are to know the value of investments, investment feasibility, the value of PBP, BEP, and to provide the alternative of potential water use in the future. This research was conducted by using field observations of the location and pipeline layout to distribute the water reservoir in residential area using GPS. The methodsof data collection are question and answer method, study of  literature, and data processing (to determine the value of investment and potential use of water for agriculture, livestock, water treatment) and calculate of economic feasibility analysis using mathematical formulas. The study shows that the use of investment amounting to Rp.276.209.295, the contributions of citizens and the three agencies was declared unfit with a payback more than 20 years. If using the potential use of water is obtained 67861847 NPV more than 0 (feasible), 19,7 % IRR ≥ MARR of 14% (feasible), and BCR value of 5,0 more than 1 (feasible). Investment return in 3,6 years, the BEP occur if residents use as much as 572.418.490 liter of water, coffee mill 101.429.658 liter, 48.189 liters of water treatment, agriculture and animal husbandry of 1.908.061.967 liter. Annual benefit of water treatment. Rp.45.000.000 and livestock farming Rp.11.625.840/year.Keywords: water allocation, investment feasibility, potential water use
