Abstract

Indonesia is rich in abundant and diverse local food sources that have the potential to be developed. Various ways to support the national food security program are carried out to maximize the production and consumption of local food sources of non-rice and non-wheat carbohydrates, which are the government's priorities, especially in the field of diversification. The utilization of banana peels can be used as flour which can be made in various processed cakes such as biscuits. The nutritional content of kepok banana peel flour per 100 grams of material is 69.8 g of water, 18.50 g of carbohydrates, 0.32 g of protein, 2.11 g of fat, 715 g of calcium, 117 mg of phosphorus, 1.6 mg of iron, vitamins B 0.12 mg, vitamin C 17.5 mg. This of course can help meet the fiber needs needed by humans. The purpose of this activity is the utilization of banana peel waste to support food security programs. The activity was carried out by providing counseling on food security and demonstrations of making biscuits made from banana peels. This community service increases knowledge in utilizing banana peel waste by being able to make snacks that have nutritional value and can reduce organic waste. It is hoped that biscuits made from banana peel flour can become a favorite snack that is not less competitive and can open up insights for household-scale food production with banana peel raw materials.

Abstract

Adolescents are the nation's assets for the creation of a better future generation. Adolescence is a time of rapid changes in terms of physical, cognitive, psychosocial or behavioral growth. Female adolescent often experience problems, one of which is anemia. Anemia is a deficiency (deficiency) of red blood cells due to low hemoglobin levels in the body. Anemia that occurs in female adolescent can interfere with the process of growth and development. The purpose of this community service is to increase the knowledge and awareness of female adolescent regarding balanced nutrition messages and anemia. The method used is public education by utilizing the media (food model). The results of this activity showed that 30.5% of female adolescent had anemia, 41,7% of female adolescent with good knowledge, and increased to 93,3% after training. The conclusion of this community service activity is that there is an increase in knowledge and awareness of female adolescent related to anemia by implementing a balanced nutrition messages. Through this activity, participants are expected to maintain a healthy lifestyle with balanced nutrition guidelines and make efforts to prevent anemia.

Abstract

Assessment of nutritional status is an important thing related to a person's level of health in order to prevent malnutrition and the risk of becoming undernourished. The tool that is often and commonly used to measure body circumference is a manual meter. This measuring tool is useful for measuring body circumferences such as upper arm circumference measurements for pregnant women, women of childbearing age (WUS) and adolescent girls, head circumference in infants, and abdominal circumference measurements for adult women and men. Measurement using a manual meter still takes a lot of time and is less practical. the purpose of this community service is to design and test the accuracy of digital body circumference measuring instruments. The method of this activity is the diffusion of science and technology to produce a digital body circumference measurement tool. The results of this activity indicate that the use of a digital body circumference measuring instrument has been successfully carried out and is used with a correlation coefficient value of > 0.6 so that the digital body circumference measuring instrument has good accuracy for measuring body circumference. The conclusion of this activity is that the digital measuring instrument has been successfully used and is declared accurate and can simplify and make it more practical when used in measurements.

Abstract

Fiber is one of the nutrients that has an important role in the body but the level of consumption is not paid attention to by the public. Along with the rapid progress of the times, it has had an impact on changes in the lifestyle of the Indonesian people, ranging from unhealthy eating patterns to lack of physical activity. The purpose of this community service is to provide information on the utilization of food waste into food with high fiber content and the development of corn bran biscuit products with kepok banana flour and increase mother's knowledge about the importance of fiber for the body. The method of this activity is through community education to help increase participants' information and understanding about the importance of fiber for our bodies. The results of this activity showed that there was an increase in participants' knowledge about the importance of fiber for our bodies. The percentage of participants with good knowledge category before attending the counseling was 60% (pre-test) and increased to 93.7% after attending the counseling (post-test). The conclusion of this activity is that corn bran can be processed into food sources of fiber. This activity was greeted with great enthusiasm and went smoothly, it is hoped that similar activities will be held in the future

Abstract

One of the standard recommendations to prevent the spread of infections, including COVID-19, is through regular hand washing. Transmission of the COVID-19 virus can occur when someone touches an item that may have been contaminated by other people's droplets. However, there were still 24,62% of Indonesian people do not obey to wash their hands properly. During the COVID-19 pandemic, washing hands with soap at school is very important to prevent the transmission of COVID-19. The purpose of this activity was to improve student behavior in washing hands with soap properly. This activity was carried out by a team of lecturers and students of the D3 Sanitation Study Program, Poltekkes, the Ministry of Health, Palu together with SD Inpres 2 Parigimpuu. The method of activity, namely counseling, simulation, and demonstration through gymnastics for the students of SD Inpres 2 Parigimpuu. As a result of this activity, students knew how to wash their hands with soap correctly and are able to practice it.

Abstract

The female adolescent is an important target for stunting reduction efforts. Adolescence is a pubertal phase with fast physical, psychological, and social growth and development. Unicef reported in Adolescent Profile 2021 that 40% of adolescents aged 15-19 yo who have low food consumption variety is related to economic factors. This community service was a balanced nutrition and anemia education among female adolescents at Ampana Tete Sub-District, Tojo Una-Una Regency. This community service was conducted in two villages (Bantuga and Uebone). Activities conducted are balanced nutrition and anemia education, distribution of iron supplement tablets, and promotion of “My Meal Plate” by using the banner. The result of pre and post-test showed that the knowledge of female adolescents was increased after conducting education.
