Abstract

Abstract

People with type 2 diabetes mellitus often face challenges in achieving an adequate balanced diet that fulfills their nutritional needs. Pecans (Carya illinoinensis) are known to be rich in dietary fiber, protein, and healthy fats, and are a rich source of antioxidant polyphenols. Consumption of pecan nuts can help control blood sugar levels by lowering lipid levels and oxidative stress to improve insulin sensitivity in patients with type 2 diabetes mellitus. Therefore, this study aims to explore the potential of pecan nut biscuits as an alternative food that can help increase nutritional value and improve dietary management in patients with type 2 diabetes mellitus. The research methods used included biscuit recipe development, analysis of SNI No. 3571:2009, in vivo test of pecan nuts in male wistars, and nutritional analysis of raw materials. Pecan nut biscuits contain 35.0% carbohydrate, 12.7% protein and 33.1% lipid. Pecan nut biscuits are the most bioactive diet biscuits for patients with type 2 diabetes mellitus.

Abstract

Kombucha tea is a beverage produced from sweet tea using symbiotic bacteria and yeast. This study aims to investigate and compare the pH, carbohydrate reduction, vitamin C content, and antioxidant content of different varieties of kombucha, analysing the effect of fermentation time on chemical characteristics which include organoleptic tests (pH value, vitamin C content and reducing sugar) and antioxidant tests. Literature study on existing research is about the pH contained, antioxidant activity, vitamin C, and reducing sugar in several types of kombucha tea. It is expected that the results of this research will provide significant benefits in the food, health and other sectors with the potential to be a good option for individuals who want to consume high nutritional drinks and have antioxidant activity, as well as provide a pleasant taste experience. The research is expected to help fulfil people's nutritional needs and support the strength of the immune system.

Abstract

Fruit ripeness detection is important in the agriculture and food processing industries to ensure optimal product quality. Proper fruit ripeness can affect flavour, texture and nutrition, making it a key focus in production process monitoring and control. The fruit ripeness detection process still needs to be done manually, which can be inefficient and inaccurate. This research aims to address these challenges by implementing the CNN algorithm with VGG-19 architecture to detect coffee fruit ripeness automatically. The process involves collecting datasets of fruit images with various ripeness levels, image pre-processing including cropping and resizing, training the CNN VGG-19 model with feature learning and hyperparameter optimisation and evaluating model performance using a confusion matrix. This experiment aims to evaluate the model's performance in detecting fruit ripeness and measure the speed and efficiency of the CNN-based detection system with VGG-19 architecture. The results of this research are expected to help develop a better system for identifying fruit ripeness.

Abstract

Transplantation is a process of transferring organs that are still functioning properly to replace organs that are no longer functioning. However, due to the limited number of organs for transplantation, interspecies transplants are performed, namely transplants between animals and humans called Xenotransplantation. Xenotransplantation is a technique of transplanting animal organs or tissues into human organs or tissues that can no longer function. Xenotransplantation can be one way to overcome the availability of transplant organs for humans. The most potential animal that can be used is the pig because it is almost similar to humans. However, xenotransplantation still causes problems due to immune rejection in the donor and the risk of transmission of infection. The purpose of writing this review article is to find out the potential, risks, and religious perspectives regarding xenotransplantation carried out in the health world. The method used in the preparation of this article is a literature study conducted by reviewing several journals, books and research articles related to xenotransplantation. To overcome the problems caused by xenotransplantation, genetic engineering is carried out in animals in order to produce more compatible organs. Thus, there are several successful organ xenotransplantation experiments although they still require further development. Ethically and legally, xenotransplantation is allowed as long as it is not abused and can save the patient. With the development of biotechnology, xenotransplantation is expected to be an alternative solution that can be used to overcome the scarcity of transplant organs in the future. So the use of xenotransplantation can potentially be an alternative solution that can be used to overcome the scarcity of transplant organs for humans. The risks resulting from the process can be reduced with further research to create animal organs that are suitable for the human body. In the perspective of Islam, xenotransplantation is allowed if it is done to save lives and not to abuse the animal.
