Abstract

Jengkol (Archidendron pauciflorum) is a local commodity with high potential as a raw material for value-added food products. In Air Keruh Village, Rambang District, Muara Enim Regency, the utilization of jengkol remains limited to raw sales with relatively low economic value. This community service program aimed to enhance the added value of jengkol through mentoring in the development of jengkol crackers as a flagship product of women-led MSMEs, while strengthening household economic resilience. The methods employed included observation and problem identification, assistance in the production process based on Good Manufacturing Practices (GMP), mentoring in packaging and marketing, and evaluation of program outcomes. The results demonstrated a significant increase in the partner’s production capacity from 5 kg to 12 kg of raw materials per week (a 140% increase). The product’s selling price rose from IDR 2,000 to IDR 5,000 per 100 grams with labeled standing pouch packaging. Organoleptic testing indicated an overall acceptance rate of 84%, categorized as “liked.” Furthermore, marketing channels expanded from local markets to direct sales and online platforms through WhatsApp Business and local marketplaces. This program demonstrates that innovation in processing jengkol into crackers can enhance the competitiveness of women-led MSMEs and generate tangible economic impacts for families and the surrounding community.
