Abstract

The requirements for starch to be used as a raw material for edible film is to have a high amylose content and be rich in nutrients. These two requirements are needed for the edible film can package food products with good physical and mechanical properties. This research aimed to optimize the starch extraction from non-productive Elaeis Guineensis Jacq (oil palm) trunks for the preparation of edible film. The starch extraction was carried out using the wet extraction using water solvent. Optimization of starch extraction was carried out using the Response Surface Methodology (RSM), Central Composite Design (CCD) from Design Expert software. The model used two factors: processing waiting time and trunk length from the shoot. The factors affected the response of starch yield and amylose content. The experimental results were in accordance with the predicted model. The optimum condition was obtained at a processing waiting time of 4.85 days and a trunk length of 70.96 cm. The yield and amylose content at these optimum conditions were 15.07% and 33.40%, respectively. FTIR analysis showed the presence of starch and protein constituent bonds. The presence of protein can be a source of nutrition for edible film product. Starch produced from these optimum conditions of this extraction had the right composition content for edible film raw material sources, especially from the amylose content.
