Abstract

This community service activity aimed to improve community literacy regarding the use of natural food colorants. The activity was conducted in Medayu Selatan through an outreach session, a visual demonstration, discussion, and evaluation involving 25 participants consisting of PKK members and local residents who were targeted because of their role in household food selection and preparation. Participants were introduced to anthocyanins, carotenoids, chlorophyll, and betalains, including the response of natural pigments to pH and heat. Understanding was evaluated using an identical 10-item multiple-choice pretest and posttest. The mean score increased from 57.2 to 86.0, an increase of 28.8 points, and 22 participants (88%) achieved a posttest score of at least 80. Immediate observation also showed that 21 participants (84%) were able to select an appropriate natural colorant in a simple food-use scenario. In addition, 23 participants (92%) expressed interest in trying natural colorants at home; however, this interest was distinguished from sustained behavioral change, which had not yet been verified. The activity therefore improved short-term understanding and practical readiness, while follow-up monitoring is required to assess household application.
