Abstract

The implementation of Good Manufacturing Practices (GMP) is necessary to support quality control and production process consistency in the bottled drinking water industry. However, GMP implementation at UYUNA bottled drinking water still faces challenges related to procedural consistency, human resource preparation, and supporting facilities. This study aims to analyze GMP implementation and its contribution to the operational performance of UYUNA bottled drinking water. A qualitative approach with a case study design was employed. Data were collected through interviews, observations, and documentation and analyzed through data condensation, data display, and conclusion drawing and verification. The findings show that GMP has been implemented through standard operating procedures, production supervision, hygiene and sanitation practices, quality control, storage management, documentation, and corrective actions for nonconformities. GMP implementation provides a positive contribution to operational performance, particularly in quality control, SOP compliance, process consistency, and production error control. This contribution operates through standardization, supervision, implementation consistency, and process control. However, the contribution is not yet optimal due to the absence of formal GMP training, inconsistent SOP implementation, and limitations in supporting facilities. These findings indicate the need to strengthen training, SOP supervision, and supporting facilities to optimize GMP implementation.
