Abstract

The fermentation process of dadih, a traditional fermented buffalo milk product from Minangkabau, is highly influenced by environmental conditions, particularly temperature and humidity. Instability in these parameters may lead to inconsistent product quality, fermentation failure, and overall quality degradation, especially in micro, small, and medium enterprises (MSMEs). This study aims to design and implement an Internet of Things (IoT)-based system for monitoring and controlling temperature and humidity in the dadih fermentation process. The proposed system utilizes an ESP32 microcontroller as the main control unit, a DHT22 sensor for measuring temperature and humidity, and a pH-4502C sensor to determine the level of fermentation maturity. Sensor data are transmitted in real time to the Firebase Realtime Database via an internet connection and visualized through a web dashboard to enable remote monitoring. The system is also equipped with actuators, including a PTC heater, Peltier TEC1 module, mist maker, intake fan, exhaust fan, and buzzer, which function as an automatic control mechanism to maintain optimal fermentation conditions. Experimental results indicate that the system is capable of performing real-time monitoring and control with an average delay of 113.33 ms, consisting of 100 ms for temperature, 110 ms for humidity, and 130 ms for pH measurements. Furthermore, the system is able to store historical fermentation data and provide indicators of fermentation maturity based on pH values. The implementation of this system enhances the stability of the fermentation process, reduces environmental fluctuations, and improves operational efficiency. Therefore, the proposed system has the potential to assist MSMEs in maintaining consistent dadih product quality, increasing productivity, and reducing reliance on manual monitoring
