Abstract

Bahan pangan sering tercemar oleh mikroorganisme. Mikroba biasanya berasal dari lingkungan sekitar yang kebanyakan merupakan mikroba pembusuk. Selain itu, mikroba dapat berasal dari hasil olahan suatu bahan pangan serta pada kondisi tertentu saat penyimpanan. Karena mikroba dapat kita jumpai di mana saja maka bahan pangan sangat jarang dijumpai dalam keadaan steril. Tujuan penelitian adalah untuk mengetahui faktor-faktor penyebab dan karakteristik makanan yang telah mengalami kadaluarsa. Metode yang digunakan adalah mengamati produk makanan yang sudah kadaluarsa ataupun yang belum kadaluarsa secara organoleptik dari segi warna, tekstur, bau, rasa dan ada tidaknya mikroorganisme, kemudian hasil pengamatan dibandingkan antara produk makanan yang belum kadaluarsa atau masih segar dengan produk makanan yang telah kadaluarsa. Dari penelitian dan pengamatan pada makanan kadaluarsa didapatkan hasil yaitu faktor-faktor penyebab kadaluarsa yaitu berupa kerusakan mikrobiologis, kerusakan mekanis, kerusakan fisik, kerusakan biologis dan kerusakan kimia serta karakteristik pada makanan kadaluarsa adalah karbohidrat: berubah warna, berlendir, berjamur dan bau basi; protein: cair (menggumpal dan encer), padat (lembek, berlendir dan busuk); lemak: berwarna kekuningan, bau tengik, rasa asam; gula: rasa asam dan bergas; buah dan sayur: berubah warna menjadi lebih gelas, berair dan lembek dan makanan kaleng: menggembung dan berkarat pada kemasan.Kata kunci : faktor penyebab, karakteristik, makanan kadaluarsa, kesehatan masyarakat

Abstract

Mother is a leader figure in a family who is in charge of managing family healthy food needs. The knowledge about hygienic food for the Family Welfare Coaching Mothers at Dasa Wisma Kalongan Kulon, Tasikmadu is still limited, because many of them come from poor families and have less educational background so that the basic knowledge of the family is not maximal (less attention). This community service activity aims to improve understanding of family welfare coaching mothers to know healthy and hygienic food, to improve understanding of family welfare coaching mothers about healthy and hygienic food characteristics and to improve awareness to society not to buy food at random. The method of counseling is done by lecturing method and explanation about healthy and hygienic food and contamination or contamination of bacteria in siomai sauce from peddlers with media poster and power point. The results of community service activities are family welfare coaching mothers understand about healthy and hygienic food and food contaminated or contaminated with bacteria, especially in siomai sauce. The conclusion of this community service activity is family welfare coaching mothers can know the benefits of healthy and hygienic food for body and family welfare coaching mothers are aware to be more careful in buying food outside so that family health, especially on school children is more secure and family welfare coaching mothers understood how to choose healthy and hygienic food for her family.Keywords: Family Welfare Coaching Mothers, health, hygienic, sauce of siomai

Abstract

At RSU Assalam Gemolong, the implementation of the SOP has not been fully implemented by health workers. General objective of this study was to determine the effect of SOP and health workers competence on completing time of inpatient medical record documents at RSU Assalam Gemolong. This type of research is quantitative analytic, cross sectional approach. The population is 115 respondents, the sample is 30 respondents, the sampling technique is purposive sampling. Data collection techniques using interviews and questionnaires. Data processing by collecting, editing, classifying, tabulating, presenting data. The results of the SOP analysis of the completeness medical record documents for inpatient medical record documents sometimes returned to medical record installation more than 2x24 hours. The health workers characteristic based on respondents’ group are 5 doctors (17%), 16 nurses (53%) and 9 medical records officers (30%). Characteristics of male 10 respondents (33%), female 20 respondents (67%). The result is 0.035 < 0.05, then there is an influence between SPO on the time of completeness of medical record documents. The result is 0.975 > 0.05, therefore there is no influence between the health workers competence on completing time medical record documents at RSU Assalam Gemolong. The conclusion of this research is that there is an influence between SPO on completing time of medical record documents and there is no effect of the health workers competence on completing time of medical record documents.

Hypertension is one of the big challenges in Indonesia. Hypertension is a type of dangerous disease. The urgency of this research is the number of hypertension patients at the Ngoresan Community Health Center, Surakarta which is increasing every year. The objective problem in this research is the increase in the number of hypertension patients every year so that research is needed on the relationship between knowledge, attitudes and family support to efforts to control hypertension. The importance of this research is as an effort to control hypertension which continues to increase every year by means of interviews and distribution of brochures and key chain. The aim of this research is to analyze the factors of knowledge, attitudes and family support towards efforts to control hypertension in patients at the Ngoresan Community Health Center, Surakarta. The stages of this research are cross sectional approach. The sample consisted of 86 respondents. The sampling technique uses the accidental sampling method. The statistical test used is Chi-Square with (α=0.05). The results of this research are that there is a relationship between knowledge and efforts to control hypertension with a p-value = 0.003 (<α=0.05), there is a relationship between attitudes and efforts to control hypertension with a p-value = 0.011 (<α=0.05 ) and there is a relationship between family support and efforts to control hypertension with a p-value = 0.034 (<α=0.05).
