Abstract

Lemuru Fish (Sardinella  longiceps) have high enough of protein contents (17,8-20%). However, lemuru fish also contains important fatty-acid, especially omega-3. Because of the contains of fatty acid was high (1-24%) and the texture is not compact, the fish become easily be broken and become spoiled. That was because of the activity of microbes or the autolysis on the post morterm. Because of that, the right and intensive handling is needed , it can be done with immediate process or with long-lasting storage. In this research, the pickling method that used was smoking with liquid smoke. The purpose of this research is to find the optimum operation condition for liquid smoke process of fish lemuru to produce lemuru fish that its fatty-acid Omega-3 did not decomposed and the fish has unique taste. The methods of this research was completely random design with concentration of liquid-smoke as the treatment and duration of liquid-smoke as the block. The fixed variables are the weight of fish, fish thickness, temperature, salt contained and duration of measurement. The non-fixed variable is concentration of smoked-liquid. At the condition where the concentration was 6% , 25 minutes of  the soaking time  gave the best optimal condition which the score shown was  EPA =  0.6066 g/100g ,DHA =  0.4033g/100g,  TBA = 0.86 mg/kg, TVB = 4.432 mg N/100g, TMA = 5.47% mgN and the total of microorganism is 3.62 x 106 CFU.

Abstract

In the era of open competition and is very tight at this time, product innovation is not an option but a necessity. The changes and dynamics in market and also the environment in general, can not be ignored if you want to continue to survive in the business. Accordingly, this case study attempted to analyze on product innovation, particularly in relation to organizational culture. Case studies conducted at the Institute for Public Broadcasting (LPP) Televisi Republik Indonesia (TVRI) as a government-owned TV station news which is also the oldest TV station in Indonesia. The analysis focused on the influence of organizational culture - which includes the type of adhocracy and hierarchy culture - to product innovation in TVRI. Data were obtained through questionnaires to managers and staff of the news division field. With the method of multiple regression analysis, the results suggest that there are cultural influences of organizational culture that include adhocracy and hierarchyculture to product innovation either jointly or individually. The type of culture that encourages more product innovation happening in the LPP TVRI is adhocracy culture. This indicates that TVRI should immediately make the transition a culture that has been more dominant, the hierarchy culture, toward a more flexible and responsive to environmental changes, which is adhocracy culture. Thus expected to be able to support its role in maximazing the function of public institutions to provide more balanced information on the people of Indonesia.

Abstract

Efficiency is an important measurement for a company's performance. In this, we're fully aware of the importance of efficiency towards company's lifecyde, study and to describe it in analytical way, by taking 8 companies in pharmaceutical industry which are listed in Jakarta Stock Exchange. The analysis is focused on comparing the companies' efficiency before and after economic crisis hit Indonesia in 1997/1998. The data were taken from Capital Market Directory of 1996 and 2000 which related to operational and production.Using DEA method, the result shows that there are 2 efficient companies both in the year of 1996 and the year of 2000. This research summarized that there are 4 companies which increased their efficiency level, 3 companies which decreased its efficiency level, and one stagnant.Keywords : Efficiency, operational, performance
