Abstract

Penelitian ini bertujuan untuk mendapatkan kandungan tepung sukun sebagai substitusi tepung tapioka yang menghasilkan sifat fisikokimia dan sensori sosis ayam terbaik. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) dengan satu faktor perlakuan yaitu substitusi tepung sukun yang terdiri dari lima perlakuan yaitu substitusi 0 g, 10 g, 20 g, 30 g, dan 40 g. Variabel pengamatan meliputi kadar air, kadar lemak, kadar protein, kadar abu, kadar serat kasar, kadar karbohidrat dan uji sensori. Data yang diperoleh pada hasil penelitian dianalisis secara statistik dengan uji F (ANOVA), jika berpengaruh nyata, dilanjutkan dengan Uji Beda Nyata Jujur dengan taraf 5%. Uji sensori menggunakan metode Kruskal-Wallis selanjutnya untuk mendapatkan hasil terbaik dilakukan uji indeks efektifitas. Berdasarkan hasil analisis fisikokimiaa dan organoleptik dengan perlakuan terbaik 0 g menghasilkan kadar air 9,10%, abu 3,05 %, protein2,28%, lemak 21,88%, serat kasar 13,79% dan kadar karbohidrat 67,38 %. Hasil analisis sensori terbaik yaitu rasa 3,28 (enak), warna 3,52 (agak krem), kekenyalan 3,36 (agak kenyal), kesukaan 2,92 (suka). Hasil penelitian menunjukkan bahwa sosis tanpa substitusi tepung sukun menghasilkan nilai indektifitas tertinggi. Namun demikian substitusi tepung sukun dengan taraf 10 % memiliki nilai indektifitas terbaik kedua selain tanpa substitusi. Kata kunci : sosis, tepung sukun, tapioka, sensori, fisikokimia

Abstract

After the fall of Soeharto regime, educational academic discourses colored by the humanization and pluralistic ^stem. The pluralistic and humanization educational ^stem are necessary to enhance the democratic state and empower civil society from state intervention. In this case, Islamic educational system should be grow and changed from the normative and emphasize on the transferring knowledge from teacher to student to more than that. The participation of student in terms of Islamic educational system is the new construction of that. With student's participation the relationship between teacher and student become more egaliter and equal This paper tries to criticize Islamic educational system within the Islamic institution like, Madrasah, Pesantren and many others. Actually the writer will emphasis^ how to apply humanistic values in the sense of Islamic educational system, such us, inclusivism, tolerance, trust and many others. Finally, the writer emphasizes the important of inter-religious education in term of Islamic education.

Abstract

After September eleven, the face of Islam in the global world was dominated by the fundamentalism. Here, the effect of the accident not only felt by the Osama bin Laden who became the number one public enemy, but also Islam get trickle effect from this accident. In this paper, the writer elaborates the significance of interreligious dialogue based on the dialogue of civilization. In the multicultural era one method or way to minimize the prejudices that exist under the consciousness of people is through dialogue, whether interreligious and interfaith dialogue, or dialogue of civilization. However, the dialogue in this paper should be understood in the state of becoming and going on process. This process is based on particular doctrine to common plat form (kalimah sawa'). This article gives some review from Islamic perspective. Of course, these values support religious and inter-faith dialogue, or what the writer called "blueprint" of dialogue.
