Abstract

Background: Food safety is defined as the confidence level that food will not cause sickness or harm to consumer when it is prepared, served, and eaten according to its intended use. This study was conducted to describe the pattern of knowledge, attitude, and practice on food safety among high school students in Jatinangor.Methods: One hundred and two respondents were involved in this study. The data were collected from the high school students in Jatinangor, West Java from August to November 2013 through the methods of questionnaire after the informed consent was obtained from the respondents. The questionnaire was translated from the Five Keys to Safer Food Manual by World Health Organization. The collected data were then presented in percentage.Results: Overall, 60.78% of respondents had moderate knowledge, 85.29% had good attitude, and 71.57% had good practice in food safety. Among the five main points on food safety in all aspects, most of the respondents were unaware of the safe temperature to store food; hence, they did not practice it.Conclusions: Even though most of the students have the knowledge, attitude, and practice on food safety, a need for relevant and motivating education should be performed for spesific indicators of food safety. [AMJ.2016;3(2):206–11]DOI: 10.15850/amj.v3n2.797

Abstract

Background: Dental caries is recognized as the most important oral burden. It is caused by the formation of lactate acid formed through reaction of bacteria and carbohydrates. Streptococci viridans has been proven as the primary etiologic agents for dental caries. Low accessibility in oral care services leads the Indonesian community to use plants in order to prevent dental caries. One of those plants is Psidium guajava (pink guava). The leaves were suggested to have antimicrobial effects on some gram-positive bacteria. When the organism is resistant to specific substance tested on media, a circular/inhibition zone around a disc containing antimicrobial substance was formed. The purpose of this study was to identify the presence of inhibition zones by infusion of Psidium guajava leaf on Streptococci viridians in vitro.Methods: This laboratory experiment was carried out in September to October 2014 at the Microbiology Laboratory, Faculty of Medicine, Universitas Padjadjaran. Infusions of Psidium guajava leaf were made into four different concentrations (10%, 25%, 50% and 100%, respectively) and the identification of inhibition zones on Streptococci viridans obtained from the laboratory was tested using modified disk diffusion test. Distilled water acted as negative control. The results were then interpreted after 24 hours of incubation. Every procedure was repeated three times.Results: All four concentrations of Psidium guajava leaf infusions have formed inhibition zones on the media, with the highest concentration (100%) producing largest average diameter.Conclusions: The infusion of Psidium guajava leaf produces inhibition zones on Streptococci virdans in vitro. Abstract

Objective: To determine whether sapodilla can be used to grow Candida albicans. Among all the high galactose and arabinose content fruits, the sapodilla was chosen because it is available year round and can get easily in market. Other than that, it also contains vitamins, calcium and phosphorus which are very useful for fungi growth.Methods: This study used an experimental study as a method of research. The researcher culture Candida albicans on the experimental sapodilla media and identifies the morphology of the fungi by using Gram staining method. The experiment will be replicated two times to get accurate result. The procedure of this experiment constitute of sapodilla media preparation, sapodilla media observation, organism preparation, planting and incubation, observation of fungal colonies and identification of the fungi.Results: In 0%, there was no fungal growth at all. In 5%, there was mild density of fungal colonies. In 10%, there was moderate density of fungal colonies and in 15% the fungal grew with very dense colonies.Conclusions: Sapodilla (Manilkara zapota) broth can be used as an alternative media for Candida albicans.Keywords: Alternative media, Candida albicans, Sapodilla brothDOI: 10.15850/ijihs.v5n1.965
