Abstract

Cookies are a type of pastry that is consumed by many people from all of aged. Cookies can be consumed as a practical and healthy alternative food. This research aims to formulate cookies combined  from wheat flour and tempeh flour with addition of roselle. The use of tempeh flour in making cookies can increase protein levels because the protein content of tempeh flour is higher than in wheat flour. In addition, the important ingredients contained in the roselle petals are anthocyanin pigments that form flavonoids that act as antioxidants. The results of this study obtained 37.00% yield of tempeh flour and moisture content of 7.36%, ash content of 2.6%, protein content of 45.59%, fat content of 24.04 % and carbohydrate content of 0.134%. Roselle produced has yield of 80.5% and has a moisture content of 7.44 %, ash content of 6.28%, protein content of 6.29%, fat content of 1% and carbohydrate levels of 78.36%. Based on the result of hedonic test, formulas F1 was selected as the best formula. Products of tempeh flour cookies and roselle powder have a yield of 72 - 85.09%. The results of physicochemical analysis of F1 cookies obtained 2.40% ash content, 7.26% protein content, 29.62% fat content, 68.60% antioxidant activity EC50 µg/ml, 206.785

Abstract

Melon is a type of fruit that has a high water content. High water content causes limited fruit storage, therefore it is necessary to preserve it to maintain the freshness of the melon. One method that can maintain the freshness of the fruit is edible coating. The purpose of this study was to determine the characteristics of organolepic melons given starch-based edible coatings from several types of tubers, namely cassava, canna, and lesser yam. This study used factorial Completely Randomized Design (CRD) with two factors. The first factor is the difference in CMC with a concentration of 1% and 1.5%. The second factor is the difference in glycerol with a concentration of 1% and 3%. The results of the study based on the ANOVA test showed that the type of starch treatment and the concentration between treatments did not have a significant effect on the texture, color, and aftertaste of the melon, but significantly affected the taste and aroma of the melon. So it can be concluded that from all edible coating formulations, panelists preferred the PS I formulation (cassava starch) with 1% CMC concentration and 1% glycerol.Keywords: cassava, canna, edible coating, lesser yam, melons

Abstract

Crackers merupakan salah satu camilan yang diolah dengan metode fermentasi, memiliki tekstur berlapis, dan renyah. Penggunaan mocaf dapat dijadikan alternatif pengganti tepung terigu sebagai upaya untuk mengurangi ketergantungan impor. Penambahan tepung udang rebon (Acetes sp) dalam pembuatan crackers dilakukan sebagai diversifikasi pangan khususnya dalam pengkayaan protein. Penelitian ini bertujuan untuk mengetahui dan menganalisis formulasi terbaik secara organoleptik dan fisikokimia terhadap crackers mocaf dengan penambahan tepung udang rebon. Penelitian ini menggunakan Rancangan Acak Lengkap dengan lima perlakuan dengan dua kali pengulangan. Data dianalisis menggunakan uji ANOVA (  = 0.05) dan dilakukan uji lanjut menggunakan uji Duncan Multiple Range Test (DMRT). Analisis yang dilakukan yaitu organoleptik dan fisikokimia (rendemen, tekstur, kadar air, abu, protein, dan serat kasar) berdasarkan hasil organoleptik terbaik. Penelitian ini menggunakan lima perlakuan perbandingan mocaf dan tepung udang rebon, yaitu F1 (95%:5%), F2 (90%:10%), F3 (85%:15%), dan F4 (80%:20%) serta perlakuan tepung terigu sebagai kontrol (FK). Hasil penelitian menunjukan bahwa crackers terbaik berdasarkan organoleptik dengan parameter rasa, aroma, warna, tekstur, dan aftertaste yaitu crackers F3. Hasil analisis fisikokimia pada crackers F3 diketahui bahwa memiliki nilai rendemen 80.72%, hardness 1770.21 gf, kadar air 2.08%, kadar abu 5.74%, kadar protein 7.64%, dan kadar serat kasar 1.95%.

Abstract

Manufacture of probiotic product that has been done a lot is manufacture of yoghurt. In the process, addition of red beans and prebiotic is done to add value to the product. Addition of Lactic Acid Bacteria and inulin in the form of banana flour with different amounts is done to find the right synbiotic yogurt formulation. This research was conducted to test the quality of product physically, chemically, microbiology and organoleptics. This research was conducted using a Completely Randomized Design with the first factor being the BAL levels added and the second factor being the levels of inulin added. Based on the tests, the results obtained that the formulation using L. plantarum as much as 1% and 2% commercial inulin is the right formulation with results that are in accordance with SNI 2891: 1992 standards. The total value of LAB resulting from the formulation is 3.24 x 106 cfu/ml with a total non-fat solid of 11.16%.Keywords: banana flour,inulin, Lactobacillus casei, Lactobacillus plantarum.

Abstract

Porang (Amorphophallus muelleri B.I) is nutritional plant with high glucomannan (~ 55% on a dry basis). Porang has 5% to 80% oxalate of its weight, which harmful for health. This research examines method of reducing calcium oxalate and increase glucomannan using principle of fermentation in porang fermented flour products. This research was carried out using factorial RAK with bacterial type factors (L.palatarum and L rhamnosus) and fermentation time (three and five days) and repeated twice. The results were analyzed using SPSS 22 one way ANOVA test and followed by randomized block design test with factorial pattern at p< 0.05 using Duncan follow-up test to determine the differences between the treatments. Analysis of glucomannan and protein levels in porang fermented flour with Lactobacillus plantarum and Lactobacillus rhamnosus bacteria during three and five days of fermentation was influenced by the length of fermentation time, while the decrease in calcium oxalate levels in porang fermented flour influenced by the type of lactic acid bacteria used. The best fermented porang flour is porang flour fermented with Lactobacillus plantarum for five days with an increase in glucomannan levels of 145.19% and decrease in calcium oxalate and protein content levels of 61.29% and 14.66 respectively.

Abstract

 Cookies are a type of biscuit made from soft dough that has a high at content and is relatively crunch. Cookies can be functional food if ingredients that have physiological activities are added in the manufacturing process that can have a positive effect on health. Some local foods that are good for health are purple sweet potato, red ginger and moringa leaves. Sweet potato flour has higher levels of ash and fiber, carbohydrates and calories are almost the same as wheat flour. The purpose of this study was to determine the effect of adding purple sweet potato flour, red ginger powder and moringa leaf powder to the organoleptic test and chemical characteristics. Based on the results of the research, the best formulation of cookies with the highest score was F3, namely cookies with 35% purple sweet potato flour, 5% red ginger powder, and 10% moringa leaf powder with 2.9% moisture content, 3.01% ash content, 6.41% protein content, and yield 96.11%. The test results of the level of preference for cookies with the substitution of purple sweet potato flour, red ginger powder and moringa leaf powder on color, aroma, texture, aftertaste, and overall were neutral
