Abstract

The objective of the reseach was to design and develop a milk chiller to decrease milk temperature from the initial of 28 oC to the safe temperature of 3 oC in a short period (1 hour maximum), so that microbes did not develop any further. The chiller was an ice bank system using a chamber to store water cooler in large volume mixed with anti­freezing substance. Chiller was used to decrease milk temperature before storing in a cooler.  Verification test results showed that chiller with the ice bank temperature of 2 oC was able to reduce the 80 litre milk temperature from 28 oC to 6 oC in 25 minutes. Result showed that to reach the milk temperature of 3 oC, the temperature of water in the bank must be set – 1 oC. Additionally, the fin type heat exchanger system in this chiller had a temperature difference of 4 oC compared to the desired temperature.ABSTRAKPenelitian ini bertujuan mengembangkan chiller susu dengan fungsi utama mendinginkan susu, dari suhu awal (28 oC) ke suhu aman (3 oC) dalam waktu maksimal 1 jam, sehingga diharapkan mikroba yang sudah ada tidak berkembang lebih lanjut. Sistem yang digunakan adalah ice bank, yaitu suatu sistem yang mampu menyimpan dan mendinginkan air dalam jumlah besar dengan suhu sampai dibawah titik beku air. Chiller difungsikan untuk mendinginkan susu sebelum susu disimpan dalam coolling unit. Hasil uji verifikasi menunjukkan bahwa chiller mampu menurunkan suhu susu se­ banyak 80 ltr dengan kecepatan penurunan suhu 0,88 oC/menit. Hal ini menunjukkan bahwa sistem penukar kalor tipe sirip seperti yang dikembangkan pada prototipe ini, mempunyai selisih 4 oC dari suhu yang diinginkan.
