Abstract

Asparagus (Asparagus officinalis L) merupakan salah satu sayuran yang peka terhadap kemunduran fisiologi dan sangat mudah mengalami kerusakan fisik setelah dipanen. Penelitian ini bertujuan untuk mengetahui pengaruh pengemasan menggunakan plastik Polipropilen dengan ketebalan 0,03 mm terperforasi pada suhu dingin terhadap mutu kesegaran asparagus. Asparagus yang digunakan dalam praktikum ini adalah asparagus yang segar dengan diameter panjang 22 cm – 23 cm. Sedangkan plastik yang digunakan adalah Polipropilen dengan ketebalan 0,03 mm, yang dikemas dengan 0 lubang, 2 lubang, 4 lubang, 6 lubang, 8, dan 10 lubang, dengan diameter lubang 5 mm. Asparagus yang telah dikemas disimpan pada suhu dingin 6 ±2oC. Hasil penelitian ini menunjukan bahwa penyimpanan asparagus pada suhu dingin dikemas menggunakan plastik film polipropilen dengan ketebalan 0.03 mm dengan diberi 2 lubang terperforasi dapat memperlambat penurunan mutu. Disamping itu, asparagus yang dikemas dengan plastik PP dengan ketebalan 0.03 mm diberi 2 lubang terperforasi lebih baik dalam mempertahankan mutu dan dapat memperpanjang masa simpan hingga periode penyimpanan hari ke-15. Kata kunci: Asparagus, plastik polipropilen, perforasi, penyimpanan dingin. Asparagus (Asparagus officinalis L) is one of the vegetables that is sensitive to physiological setbacks and is very susceptible to physical damage after harvesting. This study aims to determine the effect of packaging using Polypropylene plastic with a thickness of 0.03 mm perforated at cold temperatures on the quality of freshness of asparagus. Asparagus used in this research is fresh asparagus with a diameter of 22 cm - 23 cm. While the plastic used is Polypropilene with a thickness of 0.03 mm, which is packed with 0 holes, 2 holes, 4 holes, 6 holes, 8, and 10 holes, with a hole diameter of 5 mm. The packaged asparagus is stored at a cold temperature of 6 ± 2oC. The results of this study indicate that storage of asparagus in cold temperatures packaged using Polypropilene plastic films with a thickness of 0.03 mm with 2 perforated holes can slow down the quality loss. Besides that, asparagus which is packed with Polypropilene plastic with a thickness of 0.03 mm given 2 holes perforated better in maintaining quality and can extend the shelf life to the storage period of the 15th day. Abstract

The objectives of this research were: to determine critical parameters and to estimate it’s shelf-life using Accelerated Shelf-Life Testing (ASLT) with Arrhenius method. Rujak seasoning that packed in plastic bottle was stored at three storage temperature 35oC, 45oC, and 55oC. Each room storage was loaded with three samples. This research was carried out for 25 days and observation was done every 5 days. The parameters observed included pH and sensory parameters, namely flavor, color, and salak aroma of the seasoning. Results showed that the critical parameter of rujak seasoning was pH and all quality parameters of rujak seasoning such as pH, flavor, color, and aroma followed first reaction order. By using extrapolation, the shelf-life of rujak seasoning packed in plastic bottle which stored at room temperature 28oC was 167 days (5,6 months).

Abstract

Tomato fruit (Lycopersicum esculentum Mill) is a horticultural plant is well utilized as fresh fruit, vegetables and daily cooking spices, tomato plants are shrubs, both planted in the lowlands and highlands. Tomatoes have perishable properties due to improper handling of tomatoes before, during and after harvesting resulting in a decrease in quality. The purpose of this study was to maintain the shelf life of tomatoes with the best concentration of aloe vera gel and ginger extract in cold storage. This study uses a factorial completely randomized design (CRD) consisting of two factors. The first factor is the concentration of aloe vera gel and the second factor is the concentration of ginger extract. The first factor consists of three levels, namely: 0% aloe vera gel, 30% aloe vera gel, 50% aloe vera gel and added control. The second factor consists of 2 levels, namely: 8% ginger extract, 10% ginger extract and added control and stored at a showcase temperature of 10±2°C. Each treatment was repeated 3 times, with storage for 25 days. The parameters observed in this study are: repiration rate, vitamin C, hardness, level of damage and organoleptics. The best results showed in the treatment of 30% aloe vera gel and 8% ginger extract with a respiration rate parameter value of 40.26 ml CO2/Kg. Hours, vitamin C with a value of 27.63 mg/100g, hardness with a value of 3.53 kg/cm, damage level with a value of 3.56 and organoleptic the scent with a value of 3.62.

Abstract

Cauliflower (Brassica oleracea var. botrytis L.) is one of the perishable agricultural products. Handling these problems, preservation is necessary in order to maintain the quality of cauliflower. One technique that can be used for preservation is soaking with salt. The purpose of this study was to determine the effect of salt water concentration and soaking time on the quality of cauliflower during cold storage and to determine the best salt concentration on quality and the best soaking time on cauliflower. This research method uses a Completely Randomized Design (CRD) consisting of 10 treatments and 2 replications with a concentration of salt (NaCl) of 3%, 6%, 9% and soaking time of 10, 20 and 30 minutes. The results showed that soaking using table salt (NaCl) 10 grams with a concentration of 6% and soaking time for 20 minutes showed the best results after 10 days of observation.
