Abstract

Copigmentation has been suggested as an effective method to improve color and stability of anthocyanins and storage time.  Catechol and tannin can be used as a copigment to improve stabilize color of anthocyanins. This study aims to examine the effect of molar ratio of copigment to anthocyanin and storage time which stabilize anthocyanin.This study was arranged in factorial Randomized Complete Block Design (RCBD) with three replications. First factor were molar ratio 0:1, 50:1, 100:1; and second factor were time of storage 0, 10, 20, 30, 40 days at room temperature (28oC ± 2 oC).  Color and stability of anthocyanins were evaluated by thrugh determination of bathochromic and hyperchromic, anthocyanins concentration, retention, and kinetic parameters.  Variables were analyzed by Tuckey test, Bartlet test, and Polynomial Orthogonal test.The results showed that anthocyanin content of glutinous black rice bran extract was 426 mg/100g. Copigmentation with catechol resulted in bluish color (hypsochromic), while tannin resulted in reddish color (bathochromic).  The best molar ratio of catechol copigment was 50: 1 showed by decreasing of anthocyanin concentration of 0.35mM/day or 39.29mg/100g/day, color retention 12.78%/hour, and half-life time 8.66 hours. The best molar ratio of tannins copigment was 100: 1 showed by decreasing of anthocyanin concentration of 0.07mM/day or 7.86mg/100g/day, color retention was 2.39%/day, and half-life time of 19.80 hours.

Abstract

This study aimed to get a profile of the drinking water refill depots in Bandar Lampung and determined the relationship between total organic carbon (TOC) with the parameters required to analyze drinking water.  This study was consisted of two stages.  The first stage was a survey, and the second stage was analysis of water samples in the laboratory.  The survey form was direct observation in the field and filled a questionnaire which addressed to some places that produce  drinking water refill in Bandar Lampung.  Laboratory testing was consisted of a sample of the quality testing of physical, chemical, and microbiological properties.  Physical quality testing included testing of odor, turbidity, taste, temperature, total dissolved solid (TDS), and color.  Chemical quality testing included test of pH, total organic carbon (TOC), inorganic carbon (IC), and total carbon (TC).  For the microbiological quality testing included test contamination of total plate count and coliform contamination.  Data were analyzed with SPSS program.  The results showed that 86% depot of drinking water refill still using standard refining technology that used multiple micro filter and silica sand media filtration and activated carbon, while 14% drinking water refill depot had used reverse osmosis technology.  All samples of water from various sources of drinking water refill depots in the city of Bandar Lampung had met the requirements of drinking water quality.  The high value of the parameter TOC will be followed by high value of the parameter of pH and color as well, because the parameters of color and pH were positively correlated with TOC parameter.Keywords : drinking water, total organic carbon, water quality.

Abstract

Diabetes mellitus merupakan penyakit degeneratif yang ditandai oleh meningkatnya kadar glukosa darah. Tingginya glukosa darah dalam tubuh dikarenakan tubuh tidak dapat memproduksi hormon insulin sebagaimana mestinya. Kekurangan insulin disebabkan karena rusaknya sel β pankreas yang dapat mensekresikan insulin. Penelitian ini bertujuan untuk mengetahui pengaruh dari ekstrak serai terhadap kadar glukosa darah dan profil Langerhans mencit diabetes. Mencit diabetes diberi ekstrak etanol dan air dari serai dengan konsentrasi 125 dan 250 mg/kg berat badan. Pemberian ekstrak serai dilakukan setiap 2 hari sekali selama 30 hari. Hasil dari penelitian ini menunjukan bahwa adanya penurunan kadar glukosa darah mencit diabetes seteh diberi ekstrak serai. Tidak ada perbedaan nyata yang ditunjukan pada mencit diabetes setelah diberi oral ekstrak etanol serai pada dosis 125 mg/kgbb dan 250 mg/kgbb, serta ekstrak air serai pada dosis dosis 125 mg/kgbb dan 250 mg/kgbb. Kondisi pancreas mencit menunjukan adanya perbaikan pada mencit yang dberi oral ekstrak serai dibandingkan dengan kondisi kontrol (-) mencit.
