Abstract

Penelitian ini dilakukan untuk melihat pengaruh suhu dan waktu inkubasi pada proses pembuatan bahan pemantap dari nata de coco. Penelitian menggunakan percobaan faktorial yang disusun dalam Rancangan Acak Lengkap (RAL) dengan ulangan 2 (dua) kali. Perlakuan suhu (00 C, 100 C dan 200 C) dan waktu inkubasi (0, 3, 6, dan 9 hari). Hasil analisis menunjukkan bahwa suhu dan waktu inkubasi memberikan pengaruh nyata terhadap derajat substitusi, kadar CMC, kadar garam, kadar natrium glikolat, kadar NaOH dan viskositas dari produk pemantap, sedangkan suhu proses dan waktu inkubasi tidak memberikan pengaruh nyata terhadap viskositas. Kombinasi suhu 100 C dan lama inkubasi 6 hari adalah yang terbaik dengan kadar CMC 66,94%, derajat subsitusi 0,656, kadar garam 24,885%, natrium glikolat 1,036% dan viskositas 5,7 cp. The treatment that the process temperature (00 C, 100 C and 200 C) and the incubation time 0, 3, 6 and 9 days. Statistical anlysis showed that the treatment temperature and duration of the incubation processes and interactions of the two treatment give significant effect on the degree of substitution, CMC content, salinity, glycolate sodium, NaOH content and stabilizer viscosity of the resulting product Combination temperature 100 C and incubation 6 days old is the best CMC grading 66,94% degree of substitution of 0,656, salinity 24,885, glycolate sodium 1,036% and viscosity of 5,7 cp.
