Abstract

Penelitian mengenai penambahan kalsium karbonat pada pembuatan tepung puding instan berbahan alginat telah dilakukan. Tujuan penelitian ini adalah menentukan konsentrasi CaCO3 terbaik pada pembuatan tepung puding instan berbahan alginat yang diekstrak dari rumput laut coklat Sargassum filipendula dan menentukan karakteristik mutu tepung puding terbaik. Formulasi tepung puding terdiri atas alginat, guar gum, CaCO3 , perisa strawberry, pewarna, gula jagung, dan susu skim serta bahan pembentuk gel yaitu Glucono-ä-lactone. Pengujian produk puding instan dari alginat dilakukan terhadap sifat fisik yaitu kekuatan gel, elastisitas, sineresis dan uji organoleptik. Pada uji organoleptik, parameter yang dinilai meliputi tekstur, rasa, kenampakan, dan aroma. Formulasi produk tepung puding instan terbaik pada penelitian ini adalah tepung puding dengan penambahan CaCO3 konsentrasi 5% yang menghasilkan puding dengan kekuatan gel 168,84 g/cm², elastisitas 43,09 mm, dan sineresis 3,38%. Pada hasil uji organoleptik, puding instan terpilih mendapatkan nilai rata-rata uji rangking 45 (sangat suka), uji sensori kenampakan 3,00 (netral), aroma 4,33 (suka), rasa 3,27 (netral) dan tekstur 4,00 (suka). Mutu tepung puding instan terbaik memiliki kadar air 2,70±0,13%, kadar abu 14,96±3,57%, kadar lemak 0,41±0,08%, kadar protein 3,67%, kadar karbohidrat by difference 78,26% dan aw 0,23±0,01. Sedangkan pada analisis mikrobiologi tepung puding instan terbaik memiliki nilai rata-rata angka lempeng total (ALT) <25 x 102 koloni/g.

Abstract

A research related to the production of  alkali treated cottonii (ATC) had been carried out in order to study the effect of chopping step and drying techniques on the quality of ATC produced. Four treatments were applied in the experiment, namely was copping before sun drying (treatment A); chopping after sun drying (B); chopping before mechanical drying (C); and chopping after mechanical drying (D). The quality parameters of ATC measured were gel strength, moisture content, viscosity, yield, and whiteness. The results showed that the quality of ATC was significantly affected by chopping step and drying technique, especially in ATC gel strength, viscosity and yield. However, the effect of chopping step and drying technique was insignificant to ATC moisture content and whiteness. Chopping seaweed before drying resulted in higher gel strength of the ATC but lower in yield, while chopping after drying tended to result in lower gel strength but higher viscosity and yield.

Abstract

Abstract. Coal Mining PT. Tambang Raya Usaha Tama (TRUST) with an open-pit mining system. In alternative pit 3 there are 100 cm chunks or boulder with a percentage of +40%. While the target for fragmentation in the company is 20%. So the boulders resulting from the blasting process will disrupt the loading of the overburden. The value of digging time on the Hitachi PC 2500 Excavator that is too long will certainly cause the productivity of the digging tool to be disrupted. The average digging time of the Hitachi PC 2500 Excavator Excavator on the material resulting from blasting from the actual blasting activity is ±15 seconds (CTM). This digging time is still far from the standard digging time set by the company, which is in the range of 10 – 12 seconds. The research method was carried out with a blasting geometry design based on the R L Ash, Konya, and ICI Explosive methods. The results of the analysis of the fragmentation distribution using the R.L.Ash method with a fragmentation distribution of 100 cm in size retained 5% with a powder factor of 0.56 kg/bcm. The C.J Konya method with a fragmentation distribution of 100 cm in size retained 8% with a powder factor of 0.50 kg/bcm. The Ici Explosive method with a fragmentation distribution of 100 cm in size retained 7% with a powder factor of 0.40 kg/bcm. based on the results of consultations with the distribution company, the fragmentation size of 100 cm was retained 19% with a powder factor of 0.28 kg/bcm. Of all these methods, the optimal method for blasting geometry is to obtain a fragmentation distribution that suits the company's needs, namely the blasting geometry based on the results of consultations with the company. This can be seen from the results of the powder factor which is not too large and also the rock fragmentation obtained in accordance with the company's target.

Environmental awareness is the awareness that a person has in protecting the environment, this environmental awareness is reflected through attitudes and responsibilities in protecting the environment. In its application, it is inseparable from various challenges such as the value of good environmental awarness.
