Abstract

In West Kotawaringin Regency, there is only one home industry that processes catfish as shredded fish. The processing of shredded fish is carried out using only fish meat and spices, without the use of additional ingredients such as coconut milk. This study aims to determine the effect of adding coconut milk to the yield of shredded catfish and the level of consumer preference for shredded catfish. The type of research used is descriptive quantitative. The sampling technique used was random sampling method (random sample) with 30 panelists. The research design used was a single factor Completely Randomized Design (CRD), which became a factor, namely the addition of coconut milk. The data analysis technique used ANOVA (Analysis of Variance) and Tukey's follow-up test used SPSS 16.0. Based on the results of the study, the addition of coconut milk had a significantly different effect on the yield of shredded catfish with a value of Fcount (106.627) > Ftable (3.24). The addition of coconut milk had no effect on the level of consumer preference for the three treatments of shredded catfish (A1, A2 dan A3). The hedonic test value shows that sample A2 (20% coconut milk) has a color (4.17) and a texture (4.20) which is much preferred by consumers

Abstract

Hasil perikanan Kabupaten Kotawaringin Barat, baik dalam bentuk segar maupun olahan semakin diminati pasar.  Peningkatan permintaan ini memang sangat diharapkan mengingat tingginya potensi hasil perikanan di Kabupaten Kotawaringin Barat.  Produk  perikanan dalam bentuk segar dapat mengalami kemunduran mutu.  Oleh karena itu perlu upaya mempertahankan mutu dengan cara penanganan yang tepat agar ikan tetap segar maupun diolah menjadi produk olahan.  Kerupuk stik ikan merupakan salah satu produk olahan yang dipilih sebagai bentuk usaha diversifikasi pangan. Tujuan penelitian ini adalah untuk mengetahui tingkat kesukaan konsumen terhadap kerupuk stik ikan dengan bahan baku ikan yang berbeda.  Metode yang digunakan dalam penelitian ini adalah deskriptif kuantitatif. Penelitian ini dilakukan dengan metode purposive sampling.  Sampel dalam penelitian ini adalah kerupuk stik ikan dengan jenis ikan berbeda (ikan tenggiri, remang dan manyung) sebagai bahan baku utama.  Penelitian ini dilakukan dengan menyebarkan angket. Data yang didapat kemudian diolah dengan ANOVA (Analysis of Variance) dan uji lanjut dengan Uji Tukey.  Hasil uji ANOVA menunjukan bahwa nilai Fhit(15,092) > Ftab(3,16) dan diperkuat dengan nilai p<0,05.  Hal ini menunjukan adanya tingkat perbedaan nyata kesukaan terhadap Total Hedonik dari ketiga jenis ikan tersebut.  Hasil uji hedonik (tingkat kesukaan) terhadap ketiga jenis kerupuk stik ikan dari bahan baku ikan yang berbeda dari segi warna, rasa, aroma, dan tekstur adalah kerupuk stik ikan tenggiri lebih disukai dengan nilai total hedonik tenggiri (5,88), remang (4,98), dan manyung (5,18).

Abstract

Mangroves are transitional ecosystems between land and sea where their growth is influenced by the presence of sediment, salinity, temperature, pH, DO, and other environmental factors. One of the functions of mangroves is to play a role in the absorption or binding heavy metals. The aims of this study were (1) to determine the content of heavy metals Cu and Pb in waters and soil (sediment), (2) to determine the content of heavy metals Cu and Pb in the roots and leaves of Avicennia marina , (3) to determine the effect of differences in soil texture (sediment) on the absorption of heavy metals Cu and Pb in the mangrove Avicennia marina and (4) to determine the percentage of absorption of Avicennia marina on heavy metals Cu and Pb in the coastal waters of Sungai Bakau Village. The research design was carried out using a single factor CRD (Completely Randomized Design) with differences in soil texture (sediment) on the absorption of heavy metals Cu and Pb in Avicennia marina in the coastal waters of Sungai Bakau Village. The results showed that the heavy metal content of Cu in the waters was 0.027 ppm and 0.131 ppm Pb, while in the soil (sediment) the heavy metal Cu was 1.475 ppm and the heavy metal Pb was 6.560 ppm. Cu content of heavy metal in mangrove roots was 14.223 ppm and heavy metal Pb was 1.270 ppm, while in mangrove leaves heavy metal Cu 8.607 ppm and heavy metal Pb 0.577 ppm. Differences in soil texture (sediments) have a significant effect on the absorption of heavy metals Cu and Pb in the Avicennia marina mangroves in the coastal waters of Sungai Bakau Village. The absorption percentage of Avicennia marina mangrove uptake of heavy metals Cu and Pb in the coastal waters of Sungai Bakau Village shows that uptake of heavy metal Cu is higher than uptake of heavy metal Pb.
