Abstract

Abstract: This study was aimed to explore second generation tempe consumption pattern of in Malang.This study was descriptive qualitative.Tempeh consumption pattern was obtained from group of motherof 6-59 months child with malnutrition and pregnant withchronic energy deficiency. In general, respondentsconsumed tempeh almost everyday. Tempe products were prepared traditionally in form of snackor protein source side dish. Tempeh processing is generally done by frying. Respondents have recognizedthe new way of processing tempeh in form of second generations. Respondents living in the tempehindustry area usedmore various ingredients and more complex methods of cooking. They also indicatedthe ability to adopt new way of tempeh processing. Conclusion: People in Malang consumes tempeh intwo forms, ie. side dishes and snack traditionally processed mainly by frying. They may adopt new wayof tempeh processing.

Abstract

HIV adalah virus yang menyerang sistem kekebalan tubuh yang melemahkan kemampuan tubuh untuk melawan infeksi, sedangkan AIDS merupakan kondisi HIV tahap akhir. Sampai saat ini, obat dan metode penanganan HIV belum dapat ditemukan. Peningkatan kualitas hidup penderita HIV/AIDS dapat dilakukan melalui edukasi kesehatan khususnya pola makan sehat tinggi antioksidan untuk mencegah infeksi lebih lanjut dan memperpanjang usia penderita melalui kader HIV/AIDS. Kader merupakan sukarelawan yang memperjuangkan kesehatan dan memfasilitasi kebutuhan penderita selama di komunitas. Pengabdian bertujuan untuk meningkatkan pengetahuan kader melalui pendidikan dan pelatihan penentuan pola makan sehat tinggi antioksidan. Khalayak sasaran : kader HIV/AIDS yang belum pernah memperoleh edukasi pola makan sehat dan pelatihan penentuan bahan makanan tinggi antioksidan serta bersedia melaksanakan program kerja setelah diberikan diklat di Kecamatan Sananwetan Kota Blitar Provinsi Jawa Timur, Indonesia. Metode pelaksanaan : edukasi tentang pola makan sehat dan pelatihan penentuan bahan makanan tinggi antioksidan guna meningkatkan daya tahan tubuh penderita HIV/AIDS serta dilakukan pendampingan dalam melaksanakan pola hidup sehat dan penentuan pola makan sehat tinggi antioksidan. Terjadi peningkatan pengetahuan tentang pola makan sehat tinggi antioksidan sebelum dan sesudah pendidikan dan pelatihan melalui pre-test dan post-test. Kader HIV/AIDS menjadi tahu dan mengerti pola makan sehat dan tinggi antioksidan bagi penderita HIV/AIDS untuk meningkatkan kualitas hidup dan mencegah penyakit komplikasi.

Abstract

The quality of food service is influenced by the knowledge of hygiene and sanitation (NHS) and the hygiene and sanitation behavior (PHS) of food handlers. NHS and PHS are essential for controlling the risk factors of contamination. This research aims to assess the NHS and PHS of food handlers at Aji Santoso International Football Academy (ASIFA). This was a descriptive study with a cross-sectional design, utilizing the total population sampling method. The sample size was seven individuals. The data were analyzed descriptively. The characteristics of the samples included individuals within the productive age range of 15–64 years, with 57% male and 43% female. Educational backgrounds were 72% high school, 14% elementary school, and 14% higher education. The work experience of the samples indicated that 43% had worked for 5 years. The results showed that the good value of NHS did not align with PHS values, as evidenced by 100% of food handlers having inadequate PHS values. Therefore, training to improve both NHS and PHS among food handlers at ASIFA was deemed necessary.

Abstract

Jelly candy is a type of soft candy made with the addition of hydrocolloids. Currently, jelly candies are widely made with ingredients that can enhance their nutritional and functional value. Red beet, a material rich in bioactive compounds, can be used as a raw material for making jelly candy. Processing red beet into jelly candy may increase its acceptance due to reduced off-flavors. This study aimed to determine the effect of different types of hydrocolloids and the addition of ginger extract on the physicochemical and organoleptic properties of red beet jelly candy. The research method used was a nested design with three replications. The red beet jelly candy was made with different types of hydrocolloid (agar and carrageenan) and different concentrations of ginger extract (0%, 1%, and 2%). The results showed that the difference in the type of hydrocolloid significantly affected the ash content, nitrate and nitrite content, total phenol, and total betalain content of the product. While the addition of ginger extract nested in the type of hydrocolloid had a significant effect on the a* value, antioxidant activity, total phenol, and total betalain content of the product. The best treatment was determined using the Zeleny method. Data processing results showed that the best treatment obtained was agar jelly candy with the addition of 0% ginger extract, with an antioxidant activity value of 530.15 ppm.
