Abstract

Abstract. The source of starch that has not been widely developed and known is taro beneng (Xanthosoma undipes K. Koch). Starch is a glucose polymer that has -glycosidic bonds composed of amylose and amylopectin. This study aimed to modify the starch from taro beneng (Xanthosoma undipes K. Koch) using the Cross Linking method as well as to study the characterization of taro beneng starch compared to cassava starch Indonesian National Standard (SNI 3451: 2011). Abstrak. Sumber pati yang belum banyak dikembangkan dan diketahui yaitu talas beneng (Xanthosoma undipes K. Koch). Pati adalah suatu polimer glukosa yang memiliki ikatan α-glikosidik yang tersusun dari amilosa dan amilopektin. Penelitian ini bertujuan untuk memodifikasi pati dari talas beneng (Xanthosoma undipes K. Koch) menggunakan metode Cross Linking juga mempelajari karakterisasi pati talas beneng dibandingkan dengan pati singkong Standar Nasional Indonesia (SNI 3451:2011).
