Abstract

The presence of anthocyanin compounds as a source of natural antioxidants in purple sweet potatoes is quite interesting to study considering the many benefits of anthocyanin content. As public awareness of the importance of healthy living increases, consumer demands for food are also increasingly shifting. This research aims to determine the chemical characteristics and assess the anthocyanin content and antioxidant content as well as determine the panelists' preferences for purple sweet potato products prepared using the steamed and boiled methods. The best antioxidant content is found in sweet potatoes using the boiled method, namely 743.97 ± 9.59 ppm, the best anthocyanin content is found in sweet potatoes using the steamed method, namely 50.00 ± 0.033 mg/100g. The chemical analysis carried out was water content and ash content. The lowest water content was in the steamed method, namely 27.24% and the lowest ash content test was found in sweet potatoes using the steamed method, namely 0.32%. The organoleptic test was carried out using a preference test with 25 panelists. It was found that the results of the test for the best taste and aroma were found in products using the steamed method and the best color and texture were found in products using the boiled method.

Abstract

Inovasi produk merupakan salah satu strategi utama dalam mempertahankan daya saing industri kopi, khususnya di tengah meningkatnya permintaan terhadap produk kopi dengan nilai tambah tinggi. Namun demikian, pelaksanaan proyek inovasi kerap menghadapi berbagai kendala, terutama dalam aspek perencanaan, pengelolaan sumber daya, dan pengendalian mutu. Work Breakdown Structure (WBS) merupakan pendekatan dalam manajemen proyek yang mampu menguraikan ruang lingkup proyek menjadi unit-unit kerja yang lebih terstruktur dan terukur, sehingga dapat membantu meminimalkan risiko dalam pelaksanaannya. Kajian ini bertujuan untuk mengkaji penerapan WBS dalam proyek inovasi produk kopi melalui pendekatan systematic literature review terhadap 21 publikasi ilmiah selama 10 tahun terakhir. Hasil kajian menunjukkan bahwa struktur WBS efektif diterapkan di setiap tahapan proyek, mulai dari riset dan pengembangan (research and development), pengadaan bahan baku, proses produksi, pengujian kualitas, hingga tahap pemasaran dan distribusi. Setiap tahapan memperlihatkan bahwa penggunaan WBS dapat meningkatkan efisiensi waktu, ketepatan alokasi anggaran, serta kualitas hasil akhir produk. Namun demikian, implementasi WBS juga menghadapi tantangan, seperti keterbatasan pelatihan sumber daya manusia dan kurangnya dukungan teknologi pada skala usaha kecil dan menengah (UMKM). Kajian ini menyimpulkan bahwa adopsi WBS secara adaptif dapat menjadi solusi strategis dalam pengelolaan proyek inovatif di industri kopi, terutama dalam rangka meningkatkan efektivitas, efisiensi, dan daya saing produk di sektor agroindustri.

Abstract

Industri kopi Arabika di Kabupaten Kerinci, menghadapi tantangan utama dalam manajemen pasca panen, yang memengaruhi kualitas dan kuantitas produksi. Penelitian ini bertujuan untuk menganalisis sensitivitas parameter pasca panen, yaitu kadar air, suhu pengeringan, dan durasi fermentasi, menggunakan pendekatan simulasi dan pemodelan. Data dikumpulkan melalui simulasi menggunakan teknik One-Way Sensitivity Analysis. Hasil penelitian menunjukkan bahwa kadar air optimal pada 12%, suhu pengeringan 45°C, dan durasi fermentasi 30 jam memberikan hasil produksi maksimal sebesar 30 kg. Parameter yang tidak sesuai, seperti kadar air yang terlalu tinggi atau suhu pengeringan yang tidak optimal, mengakibatkan penurunan kualitas dan kuantitas produk. Simulasi ini menunjukkan bahwa pengelolaan parameter pasca panen yang terstandarisasi berkontribusi signifikan dalam meningkatkan efisiensi produksi kopi Arabika Kerinci. Penelitian ini merekomendasikan optimalisasi proses pasca panen untuk mendukung keberlanjutan industri kopi lokal sekaligus meningkatkan nilai tambah bagi petani dan pengolah kopi.

Abstract

The article presents a literature study synthesizing global perspectives and practices of artificial intelligence (AI) integration in vocational education. It systematically searches Scopus, ERIC, and related databases for publications from 2015 to 2025, yielding 76 peer-reviewed articles. The study employs thematic coding to analyze conceptual foundations, pedagogical approaches, and institutional frameworks. Findings reveal three primary perspectives on AI's role: pedagogical, technological, and organizational. Documented practices such as AI-powered simulators, adaptive learning platforms, and predictive assessment tools. Results demonstrate that AI integration enhances skill acquisition, learner engagement, and personalized instruction while necessitating robust infrastructure and faculty development. The article contributes to vocational education scholarship by mapping current research trends, identifying gaps, and offering actionable recommendations for educators, curriculum designers, and policymakers

Abstract

One of the determining factors in food security is the availability of agriculture water. Due to decreasing of rainfall and runoff, groundwater is one of the solutions for attaining agriculture's water needs. Groundwater has been depleted in the western region of Sragen Regency. It is necessary to investigate the groundwater level depletion in Sragen Regency so that production can be increased without overexploitation. MODFLOW-USG was used to simulate groundwater conditions mathematically. The model is based on current conditions and projected until 2033, with various scenarios for irrigation necessity which has 1, 0.8 and 0.7 l/s/ha that represented as conventional, System of Rice Intensification (SRI), and Alternate Wetting And Drying (AWD). For current conditions, model results show that groundwater level (GWL) decreased by 7.9 m from 1996 – 2019 without a scenario. Simulations from 2020 to 2033 using conventional water necessity show a decrease in GWL up to 2.585 m, 1.895 m for the SRI method, and 1.788 m for the AWD method. According to this result, the AWD water necessity is the most effective both in reducing groundwater table declining and maintaining plant productivity. However, the decreasing in GWL would occur as long as groundwater withdrawal continued, regardless of the scenario. Therefore, it is proposed to fulfill agricultural land’s water with other water resources such as reservoir or retention basins. Furthermore, there is a need for cropping patterns and scheduling that affect the amount of water demand, so water needs are met and do not over-exploiting the groundwater.Keywords: Groundwater, MODFLOW-USG, conventional, SRI, AWD
