ABSTRAK Daun tumbuhan sukun (Artocarpus altilis (Park) banyak digunakan untuk pengobatan. Air rebusan daun sukun secara empiris dipercaya dapat mengobati penyakit diabetes dan hipertensi. Daun sukun berpotensi memiliki aktivitas antioksidan untuk mengobati beberapa penyakit. Penelitian ini dilakukan untuk mengetahui kandungan senyawa fenolik dari ekstrak etanol dan air daun sukun, kadar fenolik, serta nilai aktivitas antioksidan (IC50) dari masing-masing metode yang digunakan adalah metode maserasi. Hasil penelitian menunjukkan bahwa ekstrak etanol dan air dan daun sukun mengandung senyawa fenolik berdasarkan pereaksi uji fenolik dari perubahan warna larutan uji dari kuning menjadi hijau. Kadar fenolik ekstrak etanol diperoleh lebih besar 499.5371μg/mL daripada ekstrak air 251.8519 μg/mL. Nilai aktivitas antioksidan (IC50) dari ekstrak etanol daun sukun diperoleh 86.305μg/mL dengan kategori antioksidan kuat, sedangkan ekstrak air 110.623μg/mL dengan kategori antioksidan sedang. Boiled water from breadfruit leaves is empirically believed to be able to treat diabetes and hypertension. Breadfruit leaves have the potential to have antioxidant activity to treat several diseases. This research was conducted to determine the phenolic compound content of the ethanol extract and water of breadfruit leaves, phenolic content, as well as the antioxidant activity value (IC50) of each method used was the maceration method. The results of the study showed that the ethanol and water extracts of breadfruit leaves contained phenolic compounds based on the phenolic test reagent from the color change of the test solution from yellow to green. The phenolic content of the ethanol extract was greater at 499.5371μg/mL than the water extract at 251.8519 μg/mL. The antioxidant activity value (IC50) of the ethanol extract of breadfruit leaves was 86.305μg/mL in the strong antioxidant category, while the water extract was 110.623μg/mL. mL with medium antioxidant category.Keywords: Breadfruit leaves, antioxidants, artocarpus, DPPH.
