Abstract

Kerupuk adalah makanan ringan yang sangat diminati oleh kalangan masyarakat Indonesia. Saat ini, kerupuk memiliki kualitas rendah dalam hal rasa, penampilan, dan cakup pasar yang terbatas. Proses produksi kerupuk pada skala industri kecil dan menengah sering kali menghadapi kendala dalam hal efisiensi dan kapasitas produksi, terutama pada tahap pengadukan adonan. Penggunaan metode manual dalam pengadukan tidak hanya memerlukan waktu yang lama tetapi juga membatasi kapasitas produksi. Oleh karena itu, diperlukan perancangan alat pengaduk adonan yang efisien dan sesuai dengan kebutuhan produksi. Artikel ini membahas analisis transmisi dan perhitungan kebutuhan daya pada alat pengaduk adonan kerupuk dengan kapasitas 10 kg/jam. Analisis dilakukan dengan mempertimbangkan karakteristik adonan, sistem transmisi yang digunakan, serta daya yang dibutuhkan untuk pengoperasian alat. Hasil dari analisis ini diharapkan dapat memberikan rekomendasi teknis dalam perancangan alat pengaduk adonan kerupuk yang efisien dan sesuai dengan kapasitas produksi yang diinginkan. Tujuan dari analisis ini adalah untuk merancang dan menentukan spesifikasi teknis sistem transmisi dan kebutuhan daya penggerak pada alat pengaduk adonan kerupuk dengan kapasitas 10 kg/jam. Analisis ini mencakup perhitungan torsi dan daya yang diperlukan berdasarkan karakteristik fisik adonan, penentuan sistem transmisi yang mampu menurunkan putaran motor ke kecepatan kerja pengaduk, serta identifikasi rasio transmisi yang tepat agar proses pengadukan berlangsung efisien.

Abstract

Sukoanyar Village is one of the villages located in the southern part of Kediri Regency, Sukoanyar Village is located in Mojo District. Sukoanyar Village Community Most of the residents are farmers, but not all of them have private land, meaning that the majority of them work on other people's gardens, or the "paro" system or better known as the profit sharing system, usually the land owner gets half of the harvest. while those who plant also get half of the harvest. There is one method that can increase farmers' income, namely using a hydroponic system. The application of the hydroponic system is also expected to be a business opportunity for youth members who are currently still entering their productive age. By utilizing the surrounding environment or narrow yard, it can produce plants that can be consumed or sold so as to increase people's income. Hydroponic planting systems can be done with vegetable plants, as well as fruits.

Abstract

Drying is a critical stage in the production of banana chips because it determines the final moisture content, texture, product quality, and storage stability. Many small and medium-sized enterprises (SMEs) continue to use conventional sun drying, which depends heavily on weather conditions and often produces inconsistent drying results. This study investigated the influence of drying temperature and air velocity on the reduction of moisture content in banana chips using a batch-type dryer. Two temperature levels (60°C and 70°C) and two air velocity levels (2 m/s and 3 m/s) were applied, while observations were conducted every 30 minutes for a total drying period of 90 minutes. The experimental data were analyzed using Mixed Analysis of Variance (Mixed ANOVA). Statistical analysis revealed that drying time had a significant effect on moisture reduction, whereas variations in drying temperature and air velocity did not significantly influence the moisture content at the 95% confidence level. Although not statistically significant, the treatment combination of 70°C and 2 m/s tended to produce the lowest final moisture content. These findings indicate that drying duration plays a more dominant role than the tested operating conditions in reducing the moisture content of banana chips.
