Abstract

Abstrak. Studi Sanitasi dan Densitas Bakteri, Kapang dan Khamir pada Dapur Kapal Penumpang Tujuan Luar Kalimantan Barat yang Merapat di Pelabuhan Dwikora Pontianak Tahun 2014. Tujuan penelitian ini adalah untuk mengetahui keadaan sanitasi dan densitas bakteri, kapang dan khamir di dapur kapal penumpang tujuan luar Kalimantan Barat yang merapat di Pelabuhan Dwikora Pontianak. Penelitian ini bersifat cross sectional dengan jenis rancangan penelitian deskriptif yang bersifat observasional dengan menggunakan lembar observasi dan melakukan uji laboratorium. Berdasarkan hasil observasi diketahui bahwa dua kapal memiliki sanitasi dapur dengan kategori baik dan satu kapal memiliki sanitasi dapur dengan kategori buruk. Dari hasil pemeriksaan densitas bakteri diketahui bahwa satu dari dua dapur kapal memiliki densitas bakteri melebihi nilai ambang batas (NAB) yaitu 700 koloni/m3. Sementara itu, dari hasil pemeriksaan densitas kapang dan khamir diketahui bahwa semua dapur kapal masih dibawah NAB. Disarankan kepada pengelola kapal untuk meningkatkan kegiatan membersihkan dapur. Memperbaiki atau melapisi dinding dan langit-langit dapur yang tidak rata akibat korosi. Mengkondisikan pertukaran udara di dapur. Menjaga kebersihan saringan udara pada AC. Selain itu, lampu di dapur kapal juga sebaiknya diganti.Abstract. Study of Sanitation and Bacteria Density, Mold and Yeastin The Kitchen of Passenger Ships Outside West Kalimantan Which Docked at Port of Dwikora Pontianak 2014. The purpose of this study was to determine the state of sanitation and the density of bacteria, molds and yeasts in the kitchen passenger ships outside West Kalimantan which docked at the Port of Dwikora Pontianak. This study is a cross sectional descriptive study design types observational using the observation sheet and perform laboratory tests. Based on the observation that the two ships are known to have sanitary kitchen with good category and the vessel has a kitchen with a category of poor sanitation. From the results of the density of bacteria is known that one of the two galley has a bacterial density exceeds the threshold value which is 700 colonies / m3. Meanwhile, from the results of the density of molds and yeasts in mind that all of the galley is below treshold value. Suggested for ship management to improve the activity to clean the kitchen.Repair or lining the walls and ceiling kitchen uneven due to corrosion. Exchange of air conditioning in the kitchen. Maintain cleanliness of the air filter on the air conditioner. In addition, the light in the galley should also be replaced.
