Abstract

ABSTRAK: Air Minum Dalam Kemasan (AMDK) merupakan komoditi SNI wajib, perusahaan harus memperoleh sertifikat produk penggunaan tanda SNI (SPPT SNI) dari Lembaga Sertifikasi Produk (LS Pro) yang salah satu syaratnya harus menerapkan Sistem Manajemen Mutu (SMM) Pangan. Tujuan penelitian ini melakukan evaluasi penerapan SMM Pangan IKM AMDK LSPro X menggunakan model traffic light system. Hasil penelitian diperoleh zonasi secara umum yaitu 35% perusahaan berada pada zona hijau, artinya sudah siap dan baik dalam penerapan SMM Pangan, 19% berada di zona kuning, perlu peningkatan dan 46% berada pada zona merah, penerapan SMM Pangan perlu diperbaiki. Zonasi sesuai wilayah yaitu Jawa Barat, DKI Jakarta, dan Banten dengan persentase hampir seimbang antara merah dan hijau, sedangkan Jawa Tengah dan Jawa Timur lebih banyak di zona merah, Sulawesi, Bali, Nusa Tenggara, dan Papua lebih banyak zona kuning, dan Sumatera Kalimantan seimbang antara zona merah dan kuning. Zonasi sesuai skala industri, hasil penelitian menunjukkan industri besar memiliki persentase dominan sebesar 83,33% berada pada zona hijau, industri menengah 54% zona hijau, sementara industri kecil memiliki persentase 76,47% berada di zona merah. Aspek Penerapan SMM Pangan AMDK secara umum masih perlu ditingkatkan pada aspek Perencanaan (klausul 6), penerapan GMP, dan aspek dukungan/ supporting (klausul 7) ISO 9001:2015.Kata kunci: AMDK, FQMS, SPPT SNI, traffic light system, zonasiABSTRACT: Bottled Drinking Water (AMDK) is a mandatory SNI, companies must obtain product certificate for SNI marking from the Product Certification Body (LS Pro) and must be applied the Food Quality Management System (FQMS). This study aimed to evaluate the application of FQMS for small medium industries of AMDK on LSPro X using the traffic light system. The results of the study are 35% of companies in the green zone, means the companies were applied the FQMS well. 19% are in the yellow zone, need few improvements, and 46% are in the red zone, needs several improvements. West Java, Jakarta and Banten have a nearly balanced percentage between red and green. Central Java and East Java have more companies in the red zone, Sulawesi, Bali, Nusa Tenggara, and Papua have more companies in yellow zones, and Sumatra Kalimantan balanced between the red and yellow zones. The large industries 83.33% in the green zone, medium industries 54% in the green zone, small industries 76.47% in the red zone. The application of FQMS in bottled drinking water small medium industries still need to be improved in the aspects of Planning (clause 6), application of GMP, and aspects of support (clause 7) ISO 9001:2015.Keywords:  bottled drinking water, FQMS, mandatory SNI, traffic light system, zoning
