Karakteristik Protein dan Asam Amino Rhynchophorus ferrugineus, Rhynchophorus palmarum L dan Rhynchophorus phoenicis

Abstract

Insect larvae are a popular food source in many cultures around the world, famous for their delicacy as food because they contain good sources of protein, minerals, vitamins, energy such as in the species Rhynchophorus ferrugineus, Rhynchophorus palmarum L, and Rhynchophorus phoenicis L. Little is known about how realize the full potential of insects as food, especially edible insect species in rural communities, as their nutritional and economic value is often overlooked. So a study is needed that aims to determine the characteristics of proteins and amino acids and compare the similarities and differences found in Rhynchophorus ferrugineus, Rhynchophorus palmarum L, and Rhynchophorus phoenicis L, so as to provide information to the public about the importance of protein and amino acids for the body in daily life. This study is a literature review of national and international articles. The highest protein is in Rhynchophorus palmarum (45.82%), the second is Rhynchophorus phoenicis (31.4%), the last is Rhynchophorus ferrugineus (13.80%). Rhynchophorus contains essential amino acids such as aspartic acid, glutamic acid, methionine, lysine and leucine. It was concluded that all three have high levels of protein nutrition and essential amino acids that the body needs.Keywords: Rhynchophorus ferrugineus; Rhynchophorus palmarum L; Rhynchophorus phoenicis L; proteins; amino acidĀ ABSTRAKĀ Larva serangga adalah sumber makanan populer di banyak budaya di seluruh dunia, terkenal dengan kelezatan sebagai makanan karena mengandung sumber protein, mineral, vitamin, energi yang baik seperti pada spesies Rhynchophorus ferrugineus, Rhynchophorus palmarum L,dan Rhynchophorus phoenicis L. Sedikit yang diketahui tentang bagaimana mewujudkan potensi penuh serangga sebagai makanan, terutama spesies serangga yang dapat dimakan di masyarakat pedesaan, karena nilai nutrisi dan ekonominya sering diabaikan. Maka diperlukan studi yang bertujuan untuk mengetahui karakteristik protein dan asam amino serta membandingkan kesamaan dan perbedaan yang terdapat pada Rhynchophorus ferrugineus, Rhynchophorus palmarum L, dan Rhynchophorus phoenicis L, sehingga dapat memberikan informasi kepada masyarakat pentingnya protein dan asam amino bagi tubuh dalam kehidupan sehari-hari. Studi ini merupakan literature review dari artikel-artikel nasional maupun internasional. Protein tertinggi ada dalam Rhynchophorus palmarum (45,82%), kedua adalah Rhynchophorus phoenicis (31,4%), terakhir adalah Rhynchophorus ferrugineus (13,80%). Rhynchophorus mengandungan asam amino esensial seperti asam aspartat, asam glutamat, metionin, lysine dan leucine. Disimpulkan bahwa ketiganya memiliki kadar nutrisi protein yang tinggi serta asam amino esensial yang dibutuhkan tubuh.Kata kunci: Rhynchophorus ferrugineus; Rhynchophorus palmarum L; Rhynchophorus phoenicis L; protein; asam amino
