Abstract

Abstract — Salted eggs are processed foods made from duck eggs that are preserved using the salting method. The process of making salted eggs is generally carried out by diffusion and in the traditional model of salting it takes 10-14 days. This study aims to create a diffusion device in the egg salting process to speed up salting by using air pressure. The control system applied in this study is a control system based on PLC (Programmable Logic Controller). The method used in this egg salting diffusion device is to control the air pressure system automatically with PLC as the control base to process data from the air pressure sensor and display it to the HMI (Human Machine Interface). The test results on the egg salting diffusion device were able to shorten the salted egg production time by up to 50% compared to traditional production with the use of the same salt content in eggs. Keywords — Salted Egg, Salting, Programmable Logic Controller, HMI Abstrak — Telur asin merupakan olahan makanan berbahan dasar telur itik yang diawetkan menggunakan metode pengasinan. Proses pembuatan telur asin pada umumnya dilakukan secara difusi dan pada pengasinan model tradisional diperlukan waktu 10-14 hari. Penelitian ini bertujuan untuk menciptakan alat difusi pada proses pengasinan telur untuk mempercepat pengasinan dengan pemanfaatan tekanan udara. Sistem kendali yang diterapkan pada penelitian ini adalah sistem kendali berbasis PLC (Programmable Logic Controler). Metode yang digunakan pada alat difusi pengasinan telur ini dengan mengendalikan sistem tekanan udara secara otomatis dengan PLC sebagai basis kontrolnya untuk mengolah data dari sensor tekanan udara dan menampilkannya ke HMI. Hasil pengujian pada alat difusi pengasinan telur mampu mempercepat waktu pengasinan telur hingga 50% lebih cepat dibandingkan dengan produksi secara tradisional dengan penggunaan kadar garam yang sama pada telur.
