Abstract

Pelatihan Pengolahan Kulit Bawang Merah (Allium ascalonicum L.) Potensi di Desa Warujinggo, Kecamatan Leces, Kabupaten Probolinggo.  Bawang merah (Allium ascalonicum L.) merupakan salah satu rempah-rempah yang sering digunakan selain sebagai bumbu masak juga sebagai obat tradisional. Tingginya minat konsumen terhadap bawang merah (Allium ascalonicum) yang telah di bersihkan dari kulitnya membuat dampak terhadap lingkungan yakni menimbulkan sampah kulit bawang merah yang tidak memiliki nilai ekonomis lagi. Penimbunan ini menjadi masalah besar bagi warga padahal bisa jadi bahwa kulit bawang merah memiliki potensi untuk dikembangkan menjadi obat herbal karena kandungan senyawa fitokimianya. Pada kulit bawang merah banyak senyawa-senyawa kimia yang dapat digunakan sebagai antibakteri seperti flavonoid, saponin, tanin, glikosida dan steroida atau triterpenoid. Teh merupakan salah satu minuman yang sangat digemari di Indonesia, Minuman teh dianggap terkontaminasi oleh mikroba. Maka dari itu peneliti memilih kulit bawang untk dijadikan poetensi desa dan penelitian yang dilakukan oleh KKN Universitas Negeri Malang ini bertujuan untuk membuat peningkatkan laju UMKM dengan cara memanfaatkan potensi yang ada di desa Warujinggo. Training on Potential Processing of Shallot Skin (Allium ascalonicum L.) in Warujinggo Village, Leces District, Probolinggo Regency. Shallots (Allium ascalonicum L.) is a spice that is often used as a cooking spice as well as as a traditional medicine. The high consumer interest in shallots (Allium ascalonicum) which have been cleaned of their skins has had an impact on the environment, namely creating shallot skin waste which no longer has economic value. This hoarding is a big problem for residents even though it could be that shallot skins have the potential to be developed into herbal medicine because of their phytochemical compound content. In onion skin there are many chemical compounds that can be used as antibacterials such as flavonoids, saponins, tannins, glycosides and steroids or triterpenoids. Tea is a drink that is very popular in Indonesia. Tea drinks are considered contaminated by microbes. Therefore, researchers chose onion skins to be used as village potential and the research carried out by the KKN State University of Malang aims to increase the rate of MSMEs by exploiting the potential that exists in Warujinggo village.Keywords: shallot skin, productivity, tea
