Abstrak: Desa Sukawangi terkenal sebagai sentra penghasil kopi terbesar di provinsi Jawa Barat. Hasil panen yang tinggi menyebabkan limbah kulit kopi menumpuk di pemukiman warga dan menjadi masalah lingkungan. Solusi dari masalah limbah ini adalah pengolahan menjadi produk minuman fungsional kesehatan. Tim Dosen UHAMKA melalui kegiatan pengabdian kepada masyarakat (PkM) memberikan edukasi dan pelatihan pengolahan limbah kulit kopi sebagai minuman instan kesehatan, sekaligus bernilai jual ekonomis, serta dapat dapat dikategorikan sebagai produk halal. Tujuan kegiatan meningkatkan hardskill mitra dalam mengolah limbah pasca panen kopi. Mitra merupakan kelompok tani (poktan) yang terdiri dari 25 orang warga desa yang sehari-hari aktivitasnya petani kopi dan peternak. Kegiatan PkM dilakukan dengan metode ceramah dan praktek langsung kepada mitra tentang manfaat kulit kopi dan proses pembuatan produk hingga kemasan, serta strategi pemasaran secara digital. Kegiatan diikuti dengan antusias dan hasil evaluasi berupa wawancara dan angket yang diberikan, peningkatan keterampilan peserta dibandingkan sebelum mereka mengikuti pelatihan (pemahaman meningkat sebesar 80%).Abstract: Sukawangi Village is known as the largest coffee-producing centre in West Java province. High harvest results in coffee skin waste piling up in residential areas and becoming an environmental problem. The solution to this waste problem is processing it into a functional health drink product. The UHAMKA Lecturer Team through community service activities provides education and training on processing coffee skin waste as an instant health drink, as well as having economic value, and can be categorized as a halal product. The purpose of the activity is to improve the hard skills of partners in processing post-harvest coffee waste. Partners are farmer groups consisting of 25 villagers whose daily activities are coffee farmers and livestock breeders. The activities were carried out using lecture methods and direct practice to partners about the benefits of coffee skin and the process of making products to packaging, as well as digital marketing strategies. The activity was followed enthusiastically and the results of the evaluation in the form of interviews and questionnaires given, increased participant skills compared to before they took the training (understanding increased by 80%).
