Brownies are foods that are in great demand by many people. The high sugar content in processed brownies made us interested in making processed brownies that are lower in sugar and rich in nutrition. Coconut dregs are one of the wastes produced when grated coconut meat is taken for coconut milk. The coconut dregs can be processed into flour as a substitute for wheat flour because of their high fiber content. Therefore, coconut dregs flour can make processed brownies enriched with carrots, which are rich in vitamin A. This research provides information to children about alternative food ingredients, namely coconut dregs flour, which can be used in various processed foods. One is coconut dregs brownies with carrots; to produce fiber-rich and more nutritious brownies; and to increase the economic value of coconut dregs. The results of this experiment are coconut dregs brownies that are rich in fiber, rich in vitamin A, and low in sugar with a vegetable taste that is not too pronounced, and the texture of the brownies is slightly crispy on the outside so that the coconut dregs brownies with carrot vegetables are liked by children.
